First course: Vegan beet soup with Hokkaido
We have made the first course vegan. Once you have tasted the combination of beet, pumpkin and coconut milk, you will never prepare beet soup any other way.

Who wants can paint a pattern in the soup with soy yogurt or regular yogurt. But tastes good without :)
Second course: Winter salad with nuts and apples
Colorful and healthy is the motto of our winter Christmas salad. The mixture of apples and nuts gives a delicious combination. A winter salad that is anything but boring!

Winter salad with nuts and apples
Ingredients
- ½ Pomegranate
- 1 Carrot
- 1 Sheet Red cabbage
- 10 Walnuts
- 4 EL Cress
- 3 Handful Lamb's lettuce
- 1 EL Lemon juice
- Salt and pepper
- 1 Apple
- 2 EL Olive oil
- 1 EL Balsamic vinegar
Anleitung
- Core the pomegranate. Grate the carrot and chop the red cabbage and walnuts.
- Cut the cress into small pieces. Add all the ingredients to the lamb's lettuce.
- Season with lemon juice, salt and pepper.
- Cut the apple into small pieces. Now add olive oil and balsamic vinegar. Mix well and you're done.

Fourth course: yogurt cream with strawberry mirror and pomegranate seeds
If you want to make the vegetarian Christmas dinner vegan, just reach for soy yogurt.
Yogurt cream with strawberry mirror and pomegranate seeds
Ingredients
- 150 g Strawberries
- 1 EL Honey
- 300 g Greek yogurt
- 50 g Pomegranate
Anleitung
- Wash the strawberries and cut them into small pieces.
- Heat in a saucepan with a few drops of water and stir constantly until the mixture reaches about the consistency of jam. Leave to cool in the refrigerator.
- Remove the seeds from the pomegranate. Heat honey in the microwave for 10 seconds so that it becomes liquid.
- Stir the honey into the strawberries.
- Now alternate layers of strawberries and yogurt.
- Garnish with pomegranate seeds. Ready is the last course of the festive Christmas dinner without meat.
