Ingredients
 

  • 100 g Jerusalem artichoke
  • 300 g floury potatoes
  • 1 EL Butter
  • 20 ml Milk
  • 2 Msp freshly grated nutmeg
  • 1 Pinch Sea salt and pepper

Anleitung

  • Peel Jerusalem artichoke and potatoes and cut them into small pieces. Boil them in salted water until soft. Add half a teaspoon of lemon juice. Otherwise Jerusalem artichoke will turn gray during cooking.
  • Cook the mix for about 20 minutes and then see if the tubers are already cooked.
  • If so, drain the water. And mash with the remaining ingredients and a masher until you have the desired consistency.

Tip: Instead of using a masher, you can get your mashed Jerusalem artichokes with potatoes fluffy using a food processor. I put all the ingredients in my food processor. The puree became very creamy and all the crumbles that the masher couldn't get rid of were suddenly gone.

But of course, the good old masher also does the job. Or a blender. Attention: Can be quite a mess if you use a normal bowl. I use a bowl with a lid and a small opening for the mixing sticks.

How to taste mashed Jerusalem artichokes with potatoes

Mega delicious! Slightly nutty, super creamy and fluffy. The nutty note harmonizes very well with nutmeg. Colorwise it is a little whiter than normal puree.

If you prepare puree from Jerusalem artichoke (without potatoes), then it becomes very white. But the taste is enormously intense.

I really like my Jerusalem artichoke puree with potatoes, because it makes it not taste strongly of the tuber. Puree I could eat in large quantities.

When I was eating fish the other day, there was also mashed Jerusalem artichoke. But it was a maximum of 2 tablespoons. At first I thought it was a joke. But while eating I quickly realized that it tastes very intense.

That's why I mix my Jerusalem artichoke puree with potatoes. It makes it even fluffier and tastes really delicious.

Why you should mix Jerusalem artichoke puree with potatoes

But there's another reason why I prepare Jerusalem artichoke puree with potatoes: otherwise it takes far too long to make large quantities of puree.

Peeling the tuber is an art in itself. You can peel Jerusalem artichokes before or after cooking. In both cases, it's a lot of work.

I peeled the tubers after cooking. I'll never do that again. It was hard to get the peels off. Which made for quite a mess in the kitchen.

The next time I make mashed Jerusalem artichokes with potatoes, I remove the peel before cooking.

If you have the little tubers already cooked in front of you and are annoyed why peeling Jerusalem artichokes is so hard, grab a spoon. I simply scooped out the tubers with a teaspoon. It's an insane amount of work.

But it's worth it. :)

Jerusalem artichoke puree with potatoes has the advantage that you can digest it better. The high content of dietary fiber, more precisely inulin, can cause you to get flatulence. Jerusalem artichoke is one of the prebiotic foods that our intestinal bacteria love dearly.

By mixing potatoes and Jerusalem artichokes in the puree, you make it easier to digest. With the recipe I'm sharing with you here, I haven't had any tummy problems.

To be on the safe side, I made oven vegetables to go with it, which I sprinkled with caraway seeds. Caraway is a great home remedy for flatulence. Maybe that's what it was. I don't know for sure. But to be on the safe side, I thought to myself.

Our conclusion

Mashed potato and Jerusalem artichoke tastes simply heavenly. I love it with fish and prefer to combine it with crunchy vegetables. But beware: If you are not used to Jerusalem artichoke, you can get flatulence from it. Therefore, it pays to mix potatoes into the puree.
