What ingredients do I need for a vegetarian meatloaf?

What is the secret behind the meatless roast and why does it taste so delicious? It's because of Mix of ingredients and above all to the Spices. I mixed this veggie roast by chance from ingredients I still had at home.

The result was amazing. It honestly surprised me a bit myself how delicious False Hare vegetarian can taste. Let's take a close look at the ingredients. After all, I want you to know what you're eating.

Most people only know roasts with minced meat and a few spices. But not this time, because this time I've come up with something really great for you. 😋

When the Roast without meat we need a meat substitute. In this recipe, these are lentils, kidney beans, oat flakes and corn. At first glance, you won't notice any difference. In terms of taste, the vegetarian roast will knock your socks off 😊

Legumes

Lentils, red beans and corn form the basis for this dish. Okay, you can theoretically omit the corn, but I like the roast to have a little color.

The kidney beans can be replaced with white beans or another type of bean. You can go wild here. I was all about the color here. The red beans just add some nice splashes of color to the veggie roast.

The lentils provide an extra portion of healthy carbohydrates and Protein into play. I use conventional canned lentils for this. You can also red lentils* and cook them yourself - but beware, they behave very differently and are much more floury and runny.

The roast will therefore be quite soft - you will certainly need to mix in a little flour or oat flakes to get a good consistency.

To make it faster, lentils, beans and corn come from a can. There is nothing wrong with that. I rinse them well with tap water and they are immediately ready for use. If you want, you can of course cook the legumes yourself. To do this, they should first be soaked overnight in lukewarm water and then boiled for about an hour.

Oatmeal

They ensure that the fake rabbit has a bite without meat. They are mixed into the mixture, absorb liquid and bind the ingredients. I use fine leaf for this Oatmeal. If you only have coarse ones, you can either chop them with a knife or shred them in a food processor.

But be careful: not too small. We do not want oatmeal, but still have something between the teeth.

By the way, if you have problems with gluten, you can also buy gluten-free oatmeal - you can get it at health food stores or online.

Oatmeal has the great advantage that on the one hand they are very healthy and on the other hand they saturate for a very long time. Mushrooms

Mushrooms or mushroom powder must not be missing in almost any veggie recipe. They ensure that dishes become "umami". This is a Japanese term that describes the fifth flavor. Besides sweet, sour, bitter, salty, there is also umami.

A little tip: I always add a little mushroom powder to vegetable soups. Try that out - simply delicious!

Tomato

To prevent the ingredients from falling apart, we need a little liquid. Vegetarian meatloaf tastes especially delicious when this liquid also brings flavor. That's why I decided to use tomatoes. I take peeled tomatoes from the can.

By the way, they also provide the slightly orange color of the vegetarian meatloaf. Thus, it comes a big piece closer to the original again.

Egg

An egg gives the roast more firmness during baking. It sets as soon as the temperature in the oven climbs up.

If you don't tolerate eggs or are on a vegan diet, you can simply omit the egg. Instead, use a little more flour to bind it. I've never tried it without eggs - it's best to try it yourself and experiment a little.

Spices

Whether it's a vegetarian roast, veggie meatballs or a vegetable pizza - all these dishes only become really delicious with spices. Feel free to experiment a little. At the beginning of my veggie career, I hardly used any spices, but once you've discovered curry, nutmeg, mustard and the like, the dishes taste much better.

This time I rely on tomatoes, mustard, soy sauce and oregano. That is also for the first already completely enough. If you like, you can stir in pepper and fresh herbs. But more about that later.

Recipe: Vegetarian meatloaf

Are you ready? Then you can start right away. If you've never made Falscher Hase without meat before, here's a detailed tutorial. If you've made a veggie roast before and are just looking for inspiration for the recipe, then you'll find a short version of the recipe at the end of the post.

Here comes the longer version with quite precise step-by-step instructions. The recipe is enough for three people or 6 decent pieces of roast.

Ingredients

  • 1 onion
  • 1 tablespoon vegetable oil
  • 1 can of lentils (drained weight: 240 grams)
  • 1 can kidney beans (drained weight: 240 grams)
  • 1 small can of corn (drained weight: 150 grams)
  • 3-4 large mushrooms
  • 1/2 can peeled tomatoes with juice
  • 300 g fine leaf oat flakes
  • 1 tablespoon soy sauce
  • 3-4 sprigs oregano
  • 3 tablespoons mustard
  • 1 egg
  • 2-3 tablespoons potato starch (or Cornstarch*)
  • 150-200 ml vegetable broth

1. prepare the onion

Peel the onion and cut it into small pieces. Fry it in a pan with vegetable oil until it becomes translucent. Remove the pan from the heat and let the onion cook for a short time.

2. prepare the pulses

Open the cans of lentil, bean and corn. Pour them into a colander and let them drain. Rinse them with tap water until the water runs clear.

Leave the strainer in the sink.

To understand, the drained weight is what is left at the end when you have removed the liquid from the can.

In the can of lentils and beans are usually 400-450 grams. After draining, there are still 240 grams. In short, you need a can of each legume.

3. prepare the mushrooms

Now wash the mushrooms. Cut away brown parts and clean them from dirt. Dice them with a sharp knife until they are very small. The finer the better.

4. fry the ingredients

Pull the pan with the onions back onto the stove top. Add the legumes and mushrooms. Fry these ingredients for another 5 minutes, stirring constantly.

Pour with the tomatoes and tomato juice.

I simply chop the tomatoes with a wooden spoon, which saves a lot of work. But you can also cut them up with a knife on a board beforehand.

Pull the pan off the stove top.

5. mix the ingredients

Put oatmeal, soy sauce, oregano and mustard in a bowl. Mix the ingredients with a spoon. Tip the ingredients from the pan into the bowl. Now it's time to mix the ingredients.

You can do this with a wooden spoon or, even better, with your hands.

But be careful: The pulses are quite hot! So it's best to let them cool down briefly.

6. season the vegetarian roast to taste

Once you have kneaded the ingredients, follow with soy sauce oregano and mustard.

Mix everything thoroughly. Now you can taste for the first time. Is something still missing? Then now is the perfect time to add some seasoning. If you like it spicy, use chili. If it's not tomato-y enough, you can stir in tomato paste. And a little more mustard is always good.

Now add the egg and the potato starch.

If you feel your roast is too "runny" and soft, add some more oatmeal.

Knead all the ingredients into a ball and let the roast rest for 5 minutes. Now the oat flakes absorb the liquid and combine the ingredients into a solid mass.

7. bake the veggie roast

Knead the dough one last time and form a roast. Place it in the center of the baking dish.

To prevent the vegetarian meatloaf from drying out in the oven, I take a cup of vegetable broth and pour it into the baking dish. This makes it really juicy and tasty. The roast absorbs some of the liquid, which makes the ingredients stick together even better.

Because your fake rabbit is vegetarian, it's ready faster than a roast with meat. It takes about 35 minutes at 180° top-bottom heat. Now it should have a nice crust. Meal time!

What side dishes go well with the bottle hare without meat?

As with the classic meatloaf, you can serve pretty much any side dish with the veggie version. If you're still looking for inspiration, try this:

Equally, it can also be just a piece of bread. If you like, you can chop vegetables and put them in the oven together with the vegetarian roast. It will be cooked by the vegetable stock in the casserole dish and release its flavor. Root vegetables such as parsley, carrot or fennel, tomatoes and onions are good for this.

Alternatively, you can also take the juice of the red cabbage as a sauce substitute. Tastes good both :)

By the way, I cook the red cabbage myself. For one head of cabbage I fry an onion, add the cabbage cut into small pieces. Then I chop two apples and add them to the cabbage together with vegetable broth, caraway seeds, salt and 2 tablespoons of apple cider vinegar.

The red cabbage must cook on low for about 40 minutes until it is nice and soft. This can be done on the side, while the roast is in the oven.
