What ingredients make the chickpea fritters vegan?

Eggs are used in most frying recipes. But not in my recipe. Because these loaves are vegan and therefore completely free of animal ingredients.

Before we get started, I want to say a few words about the ingredients. I'll tell you what ingredients you need and what you can substitute them with if you don't have them on hand.

Bratlinge know most only in the form of minced meat - maximum still vegetable bratlinge. But not today, because this time I have come up with something very special for you.

Sweet potato

The main ingredient for the loaves are sweet potatoes. Compared to regular potatoes, they contain twice the amount of fiber and one and a half times the vitamin C. In addition, the orange tuber is packed with carotene, potassium, calcium and vitamin K.

Sweet potatoes strengthen the immune system, ensure a healthy heart and prevent cravings.

If you don't have any sweet potatoes at hand, you can use floury potatoes. With firm-cooking varieties it does not work so well - so please look carefully.

The patties are very juicy and incredibly fluffy. Thanks to the sweet potato they have a beautiful golden yellow color.

Chickpeas

They give the chickpea patties not only their name, but also a whole lot of fiber, protein and healthy carbohydrates. In addition to many nutrients, 100 grams also contain 15.5 grams of fiber - that's half of what an adult should eat per day. Fiber is so good for our bodies because it swells in the stomach and intestines, making us feel fuller and keeping blood sugar levels constant.

Studies show that anyone who eats chickpeas regularly reduces the risk of becoming overweight because they prevent cravings.

But also for all those who are in the process of muscle building and want to reach for vegetable proteins, the legumes are interesting. One serving of chickpeas (100 grams) contains 21 grams of protein.

Dried or cooked chickpeas

You can either use canned cooked peas, or soak and cook your own.

If you choose the dried version, you must soak the chickpeas in water for at least 12 hours. Better is 24 hours. It's best to put them in the fridge so they're out of your way and protected from mosquitoes. While the chickpeas are absorbing the water, they may make strange noises. It crackles and bubbles. Don't be surprised :)

The next day, the small peas go into a saucepan. Add salt and cook for at least half an hour. After that you can go for the chickpeas recipe.

The chickpeas can be replaced with white beans.

Peas

I put the peas in the recipe mainly for the color. The orange patties look really great with the green dots. But peas also serve another purpose.

The green vegetable is dismissed by most as a side dish and totally underestimated. Peas are very good for weight loss, because they contain few calories and hardly any fat. In each pea is a lot of vitamin E and B vitamins, beta-carotene, magnesium, iron, phosphorus, calcium and zinc.

Most frozen peas are pre-cooked, so you don't have to cook them additionally, but can use them directly. The situation is different, of course, with dried peas - for them, as with chickpeas, soak and cook.

Spices

However, spices are the only way to make all kinds of meatballs something very special. I like to use curry powder or garam masala. These oriental spice mixtures harmonize wonderfully with the chickpeas.

If you don't want to use any of the seasoning mixes at all, you can stir in paprika powder and fresh herbs like parsley or chives. Garlic also works well in the chickpea patties.

Cornstarch

Our mass is relatively liquid due to the cooked sweet potatoes. If you have a little more time, you can cut the potatoes into small pieces and put them in the oven. At 180 ° upper-lower heat they need about 20 to 30 minutes, depending on the size. This gives them a really good roasted flavor and a firmer consistency.

For binding I like to use Cornstarch*You can also use potato starch, guar gum, rice flour, Psyllium husks* or use wheat flour.

Depending on how liquid your mass is, you will need more or less of the binder. A little sensitivity is required here.

With what recipe a vegan fry succeeds

Are you ready? Then you're ready to get started. If you've never made veggie patties before, here's a detailed tutorial. If you've made them before and are just looking for recipe inspiration, you'll find a short version at the end of the post.

Here comes the longer version with quite precise step-by-step instructions. The recipe is enough for two people or 8 fritters.

Ingredients

  • 800 g sweet potato
  • 1 onion
  • 300 g chickpeas
  • 1 tsp garam masala or curry powder
  • 1/2 tsp salt and pepper
  • 3 tablespoons peas
  • 1 TBSP. Cornstarch*

Also: bowl, pot, pan, knife and board

1. prepare the sweet potato

Peel the sweet potato and cut it into cubes. The smaller the cubes, the faster it will cook. Put the pieces in a saucepan and bring water to a boil.

Put the sweet potato in the pot and cook it until it is soft. By the way, this is very fast - usually it takes no more than 10 minutes.

2. fry the onion

Now is the perfect time to dice the onion. Peel and halve them for this purpose.

Cut it into small pieces and fry it in a pan with a little olive oil until it becomes translucent.

Then remove the pan from the stove.

3. prepare the mass

Open the can (if you chose the canned variety) and rinse the chickpeas thoroughly. Put them in a bowl.

Pour off the water from the sweet potatoes and add them to the chickpeas.

Add garam masala, pepper and salt. Blend the ingredients with a hand blender to puree the chickpeas. You may still see a few pieces.

Add the sautéed onion.

When the mixture is nice and uniform, add the peas. It's best to use small frozen peas, you don't need to cook them. Stir the peas in carefully so they don't break - we want them whole in the batter.

Taste the mixture for the fritters. Before the Cornstarch* you can season as you like. I'll give you a few suggestions for additional spices directly below the recipe.

4. form chickpea patties

When you are satisfied, you give the Cornstarch* about this. You may need more than I have written in the recipe, depending on how much water the sweet potatoes have absorbed.

So go a bit by feel.

Wet your hands and form loaves.

5. fry the loaves

Add a little olive oil to the pan and sear the patties on both sides. After about 3 minutes per side they should be ready.

How to refine the veggie loaf?

There are many ways to refine the recipe for the vegetarian patties. You can use fresh herbs, spice mixes or vegetables to add even more flavor to the mixture.

It doesn't matter if you're not quite happy with it yet, with these ingredients you'll refine the loaves in no time:

  • Fresh herbs like parsley, coriander, chives, mint
  • Garlic
  • Caraway
  • Bell pepper (red or yellow)
  • Paprika powder
  • Mustard
  • Vegetable soup powder
  • Chili
  • Tomatoes
  • Lemon juice or lemon zest

  • Nuts like cashew, walnut, pistachio
  • Kernels and seeds like Flaxseed*Psyllium seeds, Chia*sunflower seeds or pumpkin seeds
  • If it does not have to be/should not be vegan: Feta and eggs

Can you freeze chickpea loaf?

Yes, the patties can be frozen wonderfully. So you can make the loaves in larger quantities and then preserve them. They are very space-saving and the perfect meal for the office. Just defrost them slowly in the refrigerator the night before and prepare them fresh in the office.

Or fry at home and pack in a tupperware box. The vegan fritters also taste very good cold. Very tasty with: A salad or dip with sour cream and herbs or. homemade ketchup.
