Have you heard of green spelt fritters? I added to our recipe database because they are just so mega delicious! And because they expand our Bratlinge collection :)

I love patties in all variations. So it's more than time to make vegan green spelt patties and create even more delicious veggie office recipes. Maybe you already know my Oatmeal patties or the quinoa patties.

Meatballs - you have to put an egg in them so they don't fall apart! Nonsense, I say. We prepare our green spelt patties vegan.

Tastes wonderful and brings at the same time a lot of vegetables on the plate. We all eat far too little of them anyway. Right? :)

You can prepare green spelt patties and simply warm them up at work. You can freeze them ready-fried or still unfried.

They taste good hot, lukewarm and cold. I love green spelt fritters with potatoes and salad. Or just with a big load of salad.

Visually, the Grünkorn meatballs are somewhat reminiscent of our oatmeal fritters with Flaxseed*. This is probably due to the classic shape. However, they are very different in taste.

The recipe is perfect for using leftovers. You can customize it to your liking. Vegetables can be easily replaced or omitted.

You'll just have to experiment a bit. You can stir in celery, leek or even mushrooms.

Zucchini makes the little veggie meatballs juicy. And carrots make them colorful.

Because the green spelt patties are vegan, you can also taste the dough raw without any problems and season it at any time.

Since we're not using egg, we need other ways to bind the loaves. Instead, oatmeal provides, Cornstarch* and breadcrumbs for firmness.

If the dough seems very runny, use a little more breadcrumbs.

You don't have green spelt meal, but only green spelt? No problem. Then boil the kernels in the soup until soft. Then puree them in the food processor and then simply continue according to the recipe.

Green spelt patties with vegetables *vegan *.

Ingredients
 

  • 100 g Green spelt meal
  • 200 ml Vegetable broth
  • 150 g Zucchini
  • 1/2 Carrot
  • 1/2 Confederation Parsley
  • 1 small onion
  • 1 EL Cornstarch
  • 2 EL Oatmeal
  • 1 EL Breadcrumbs
  • 1 TL Mustard
  • Salt and pepper

Anleitung

  • Boil the green spelt meal in vegetable broth. Let it simmer for 20 minutes on the lowest heat. Remove from heat and let cool.
  • Wash and grate the zucchini. Salt the zucchini and set aside. The salt now extracts the liquid from it.
  • Rasp the carrot. Chop the parsley.
  • Chop the onion and fry it with olive oil. 
  • Mix onion and parsley in a bowl.
  • Press the zucchini firmly with a kitchen towel. Now it comes together with all the other ingredients in the bowl. Knead the ingredients with your hands and season the green sprouts with spices. Let the ingredients rest for 5 minutes.
  • Form loaves with wet hands and fry them on both sides for a few minutes. Done!
