Ingredients
 

  • 50 g Hokkaido
  • 140 g Beet
  • 100 g floury potato
  • ½ Onion
  • 1 Garlic clove
  • ½ l Vegetable broth
  • 2 EL Coconut milk
  • Nutmeg, salt and pepper to taste Optional: chili oil

Anleitung

  • Cut the pumpkin into small cubes. Leave the peel on if you take a Hokkaido. Other pumpkins you have to peel.
  • Peel and dice the beet and potatoes. Attention: Wear gloves. The beet stains very strongly!
  • Chop onion and garlic and fry them with a little oil in a pot.
  • Pour in vegetable broth and add the vegetables. Cover and simmer for 20 minutes.
  • Puree the soup and add the coconut milk. Season with nutmeg, salt and pepper.
  • If you like it spicy, add a little chili oil.
