That's why we swap white flour for whole spelt flour. Wholemeal flour keeps you full much longer. It makes the small pancakes a little darker in color. This makes them healthy at first sight :)

Instead of vanilla sugar, we use real vanilla. For this, you simply scratch out half a vanilla bean. You will love the taste! It tastes much more intense and less sweet.

And we exchange conventional household sugar for Coconut blossom sugar*. You can also choose a different sugar alternative. In any case, we only use half the sugar specified in normal recipes.

Peaches provide the sweetness. Just normal fructose - unprocessed and natural. That's how it tastes best and is healthiest.

The curd and eggs make pancakes very moist and fluffy. They also provide plenty of protein in the pancakes.

Ingredients
 

  • 250 g Low-fat curd cheese
  • 100 g Whole spelt flour
  • 100 ml Milk
  • 3 Eggs
  • 1/2 Vanilla bean
  • 2 TL Coconut blossom sugar
  • 2 TL Lemon zest

Anleitung

  • Whip the egg whites and set aside.
  • Grate the zest from the lemon. Put it in a bowl with all the other ingredients.
  • Mix all the ingredients except the egg whites with a mixer or a whisk.
  • Fold in the egg whites.
  • Put a little coconut oil in a pan and let it get hot.
  • Bake the batter in small portions to make golden brown pancakes.

Ingredients
 

  • 3-4 Peaches
  • 100 ml Water
  • Lemon juice
  • 1 Pinch Cinnamon

Anleitung

  • Cut the peaches into small pieces. You do not need to peel them for this.
  • Bring to a boil with water, cinnamon and lemon juice. If you eat the compote fresh, for that 5 minutes of cooking time is enough.
