As a sweet tooth I don't want to deprive you of these fluffy low carb quark balls. This low carb recipe with quark is the perfect dessert: quickly ready and mega delicious in taste.

We all know the super delicious quark balls from the bakery. Round, sweet, and poof, there's another one in your mouth.

Unfortunately, the sweet bites are a real calorie bomb with lots of carbohydrates. The scales quickly show a few kilos more.

But we definitely don't want to do without our quarkinis. That is why we make our Low carb quark balls simply yourself. Snacking with a clear conscience. Sounds great, doesn't it?

Today I'll show you that it's anything but complicated to make quark balls yourself. Even novice bakers and cooks can do it.

What ingredients do I need for the low carb quark balls?

Let's take a quick look at the ingredients before we get to the recipe. After all, you should know what you're eating. And what makes the meatballs so incredibly delicious. I'll give you a few tips to make this delicious dessert a sure-fire success.

Curd

Well, who would have thought that the main ingredient for quark balls is quark? 😅 If you eat healthy, you should regularly put curd cheese on your shopping list.

Because the dairy product is very healthy, low in calories and helps us lose weight as well as build muscle.

By the way, curd cheese is very healthy. It contains a lot of calcium, which is especially important for us women. Calcium strengthens our bones, lowers blood pressure and helps against PMS symptoms.

But there are many more good things in quark: lots of protein for effective muscle building, lots of vitamin B2 and lactic acid bacteria, which serve as a fitter for our intestinal flora.

100 grams of low-fat cottage cheese contain just 66 calories. If you take classic quark with 40 % fat content, you get 160 calories.

Protein powder

The protein powder provides us with plenty of protein in addition to the curd. And is perfect for all who are busy training.

Protein powder I prefer to take from Foodspring. It doesn't taste as artificial as many others and it comes in many different flavors. You can times in the Visit the online store of Foodspring. The most delicious taste is vanilla or coconut in the curd balls.

If you are interested in Foodspring products, I can give you a Foodspring discount code give. With the code WGW15FS you get 15% on your order!

If you want to do something good for your body after sports, reach for a protein shake. The extra portion of protein ensures faster muscle growth. Special shakes like the Shape Shake from Foodspring* prevent cravings. So you can get rid of unwanted fat deposits.

In many quark ball recipes vanilla sugar is used. But this is nothing more than flavored table sugar. Since we prefer to take Protein powder with vanilla flavor. And additionally half a vanilla bean. The taste is much more intense and less sweet than vanilla sugar.

Because when I snack, I snack healthy - at least most of the time. That's why I save on household sugar in this recipe. The protein powder is already sweetened with stevia, which is considered a particularly healthy sweetener.

Coconut flour

The next ingredient rich in protein is Coconut flour*. It is used as a substitute for classic white flour. Coconut flour* is not only much healthier, it also has several other advantages.

Coconut flour* is:

  • Gluten free
  • Low fat
  • Rich in fiber and protein
  • Cholesterol free
  • Low carb
  • Unbelievably delicious!

Eggs

Something you need to know about Coconut flour* know: It absorbs an enormous amount of liquid. That's why you can't replace the white flour 1:1 in cakes, pancakes and the like. Coconut flour* replace.

To cover this large liquid requirement, I reach for two eggs. The remaining liquid comes from the curd. The coconut flour needs a short time to soak up with it. Therefore, the dough must always rest for a short time and then changes its consistency.

By the way, the eggs are also responsible for the fact that the low carb quark balls get such a beautiful color during baking.

Then we need only a small pinch of salt and a bit of Baking powder* to make the quarkinis nice and fluffy.

Birch sugar or erythritol as topping

Because they are supposed to look similar to store-bought quarkinis, they need a small load of sugar as a topping. But even this can be easily replaced with a healthier alternative. Powdered X Sugar* is the best way to save calories and avoid classic household sugar.

It is best to sprinkle the sugar on the balls when they are already a little cool, otherwise they will suck the Powdered X Sugar* because it simply stops.

Curd balls are

  • Low carb
  • Free from table sugar
  • Gluten free (depending on the protein powder!)
  • Inside super fluffy
  • Crispy outside
  • A great way to snack in a semi-healthy way

A quick recipe for fluffy cottage cheese balls

Are you ready? Then you can start right away. If you've never made your own quarkinis before, here's a detailed tutorial. If you've made them before and are just looking for recipe inspiration, you'll find a short version at the end of the post.

Here comes the longer version with very precise step-by-step instructions. The recipe is enough for 14 balls, so two people.

Ingredients

Also: bowl, pot of hot canola oil for frying and a plate with paper towels to drain the fat.

1. mix the eggs and cottage cheese

Beat the eggs. Put the yolks and egg whites in a bowl. Mix them with a whisk until smooth. Now add the curd cheese.

Blend the ingredients until you have an even mixture.

2. mix the ingredients

Now weigh out all the other ingredients. First of all, add the coconut flour and the Birch sugar* to the recipe.

Then add the protein powder and Baking powder*.

And finally, the salt. Why salt in sweet recipes? The salt ensures that we perceive the sweetness in the dough even better. It therefore enhances the taste sensation and makes cakes, quarkinis and the like seem sweeter.

Once you've mixed everything together, let the ingredients swell for 5 minutes. During this time, the coconut flour and protein powder will absorb the liquid from the eggs and curd.

3. deep fry the low carb curd balls

While the dough is resting, you can fill a pan or pot with about 4 cm of vegetable oil. Heat the oil slowly.

In the meantime, form the balls. Take a good heaped teaspoon of the dough per ball. Wet your hands and roll balls.

Put the balls one by one in the oil and turn them quickly. This is because they turn dark brown very quickly.

When they are evenly colored on all sides, remove them from the oil with a spoon. Put them on a plate that you have previously covered with paper towels.

The paper now absorbs the excess fat.

When the meatballs are lukewarm, sprinkle them with Powdered X Sugar*. And then enjoy immediately. Quarkinis taste best when they are still warm on the inside.

If you like, you can dip them halfway in chocolate after they have cooled.

By the way, the quark balls taste especially delicious with coffee, cocoa or a cup of tea.

What is the shelf life of quarkinis?

The low carb balls taste best when you prepare them fresh and eat them directly. Especially when they are still slightly lukewarm, you will melt away.

If you notice before frying that it will be too much, leave some of the batter. You can prepare it in the evening or the next day.

Once the balls are ready, you should eat them within two days.

Can they be frozen?

If you have made too much, you can freeze the curd balls. But you have to know that they don't taste as good as the freshly made ones.

What is too much, you can take to work or give a friend. Or you can simply invite a friend over for a cup of coffee again. You're sure to have a lot to talk about.

And here, as promised, the short version of the recipe for those who are in a hurry:
