Who doesn't like to start the day with something sweet?

As a big sweet tooth, I would love to constantly spread chocolate spread, jam and honey on my bun.

But that's terribly unhealthy, doesn't keep you full for long, and should really be the exception.

In between, however, I treat myself to a homemade chocolate cream without sugar or a delicious rhubarb strawberry jam with birch sugar.

But even better are Oatmeal muffins without sugar! The sweetness get the breakfast muffins from the bananas and blueberries. I want to show you today how your Breakfast muffins healthy and delicious be

With these biscuits you can start the day healthy, fit and full of power!

This is why you should bake breakfast muffins with oatmeal

I present you now a wonderful oatmeal recipe. It is free from table sugar, suitable for all who have a gluten intolerance (Attention: Not all oatmeal is gluten-free!) or suffer from lactose intolerance.

Although I call them breakfast muffins, you can of course eat them all day long. They taste great with coffee in the afternoon, as a delicious dessert, as breakfast and as a snack.

Oatmeal muffins by the way are also perfect for Birthday parties, there are plenty of unhealthy cakes and pies anyway. Children love them because they are so juicy and fruity.

Recycle brown bananas

We all eat far too much household sugar. So you can be creative when baking. The great thing about the bananas in the recipe is that on the one hand they ensure that the muffins are juicy. They're also responsible for the natural sweetness. And if you ever want to quickly use up brown bananas, the recipe also comes in handy.

Bananas make breakfast muffins healthy. Behind the brown skin hides an extra load of potassium, magnesium and vitamin B6.

TipIf you have a lot of brown bananas, you can peel them, cut them open and freeze them. The next time you want to bake something, just defrost them. You can also add them to smoothies.

Save calories

If you replace household sugar with bananas, you can save a lot of calories. Here is a small comparison: 100 grams of banana contain 280 calories, 100 grams of household sugar contain 1,200 calories.

There is so much to be said for fluffy and quick muffins with oatmeal.

Start the day healthy

Oatmeal, egg and fruit are all ingredients that no breakfast table should be without. So why not use them to make healthy breakfast muffins? With every bite you take a whole load of nutrients. The oatmeal keeps you full for a long time and prevents cravings.

Plus, the muffins are great to portion out and take to work.

What ingredients make breakfast muffins healthy?

I'm not a fan of recipes with forever-long ingredient lists. I prefer recipes that I can prepare with ingredients that I have at home anyway. Ideally, you can even just put them all in a bowl and mix. Done.

These muesli muffins are just such a recipe. Perfect for when you need something quick, but still delicious and healthy. So you know what you're eating early in the morning, let's take a quick look at the ingredients.

Oatmeal makes breakfast muffins healthy

I love oatmeal! In normal muesli, however, they are too dry for me most of the time. That's why I like to prepare porridge, because the whole thing is a little creamier.

For all porridge fans:

But back to the oatmeal. The small flakes do quite well as a binder in vegan recipes like Kidney beans fritters or in Oatmeal cookies without flour. Or simply in a breakfast smoothie.

Oatmeal makes breakfast muffins healthy. This is due to the fact that oatmeal is a whole grain product with very good nutritional balance. They are rich in fiber, which makes us full for a long time and is good for digestion. Also, you'll find a lot of protein in them.

But oatmeal is also quite wonderful for beautiful shiny hair and strong nails. I could rave on forever. But if you are interested in it, you look best in the post: Why you should eat oatmeal every day, over.

By the way: You can reduce the amount of oatmeal and instead you can also use grated hazelnuts* Fold in. For example, replace 4 tablespoons of rolled oats with the same amount of hazelnuts or almonds.

Bananas in the muesli muffins

Ripe bananas provide pleasant and natural sweetness. The recipe is ideal to process already slightly older bananas.

The riper the banana, the sweeter the muffins. But not only that, because in the overripe state, the fruits are the most easily digestible. The browner they become, the higher their fructose content.

If your bananas are still not ripe enough, you can use a little Birch sugar* help. I bake the oatmeal muffins without sugar or sugar substitutes.

If the recipe doesn't seem sweetened enough after baking, you can help it out with honey, powdered sugar, or fresh fruit.

Eggs - yes or no?

The egg ensures that the dough is moist and the ingredients stick together. If you don't have eggs on hand or can't tolerate eggs, you can make these breakfast muffins vegan. To make them replace the egg with applesauce. The rest of the ingredients remain the same.

Spices for the muesli muffins

Actually, it does not take much. A little Cinnamon* and you have the perfect Oatmeal muffin.

Cinnamon* is a spice that tricks our body into thinking it's sweet. Try a little of it with Cocoa powder* and prepare a hot chocolate from it. You can do without sugar completely.

Oatmeal, Cinnamon* and banana, this combination is always a dream. I have already tried for the oatmeal cookies set. And they turned out just wonderful.

I like to add a little cardamom powder to the recipe. It gives a particularly delicious flavor and, by the way, is the most iron rich food in the world. Because I am always struggling with iron deficiency, I put the spice in pretty much every dessert. Also this Apple bread with nuts and cardamom refilled the iron stores very quickly!

What else goes into the muffins: a little bit of Baking powder* and lots of love.

The best recipe for healthy oatmeal muffins without sugar

Are you ready? Then you're ready to get started. If you've never baked healthy breakfast muffins before, here comes a detailed tutorial for you. If you bake regularly and are just looking for some inspiration, then you'll find a quick version of the recipe at the end of the post.

Here comes the longer version with exact step-by-step instructions. The recipe is enough for 7 muffins.

Ingredients

Also: bowl, fork, whisk, muffin baking tray, muffin tins.

1. preheat the oven

Because the recipe is ready so quickly, you should turn on the oven in the first step. Choose 200° upper-lower heat.

2. prepare the banana

Peel the bananas. Weigh them. You should now have 300 grams in front of you. That is about 2 bananas. Cut the very brown parts out of the bananas.

Mash them with a fork until you have a fine pulp. The riper the bananas, the easier this step is. If the fruit is very firm, you can use a Blender* help.

3. mix the ingredients

Give the oatmeal, the whole egg, Baking powder* and Cinnamon* to the banana puree. Stir the ingredients with a whisk until smooth (alternatively, a spoon will do).

The dough is thick. If it is too liquid, add 2-3 tablespoons of rolled oats. The riper the bananas are, the more liquid the dough becomes.

At the very end, gently fold in the blueberries so they don't get squished.

4. fill the dough and bake

Use a spoon to spoon the batter into the muffin tins. Of course, you have to line them with muffin cups beforehand. Use about 2 to 3 tablespoons of the batter per muffin.

Bake the muffins for 5 minutes at 200°. Then turn down the temperature and bake at 180° for another 15 minutes. Done!

Let the breakfast muffins cool.

Interesting facts about the oatmeal muffins with banana

In the refrigerator the muffins will keep for 2-3 days. Because we work with fresh banana, they may begin to mold after only 3 days.

You can prevent this by simply freezing the breakfast muffins and then thawing them one at a time as you please.

I decorated the cakes when they were cooled with a little Greek yogurt, a fresh berry and a leaf of mint. They don't rise as much as traditional muffin doughs, so toppings like these do especially well.
