Coconut blossom sugar

Lemon zest
Instruction
Whip the egg whites and set aside.
Grate the zest from the lemon. Put it in a bowl with all the other ingredients.
Mix all the ingredients except the egg whites with a mixer or a whisk.
Fold in the egg whites.
Put a little coconut oil in a pan and let it get hot.
Bake the batter in small portions to make golden brown pancakes.
