Fancy some homemade almond cream? Here's how you can make your own brown and white almond paste. In just 5 minutes.

For preparing the No Bake Chocolate Brownies all the ingredients were ready. Only the almond cream was still missing. Quickly to DM - and there I could hardly believe my eyes.

The small jar of almond paste (250 grams) cost 8.75 euros. That was then by far the most expensive ingredient of the delicious brownies.

Because I knew I would want to make the No Bake Chocolate Cake more often for sure, I needed a solution.

After looking at the list of ingredients (only almonds) I realized that Make almond paste yourself can't be that complicated after all. And it isn't. Making almond cream yourself is really no art.

So today we have almonds from the jar. In the form of a really delicious and irresistible tasting almond paste.

The homemade almond paste but does not only end up in the cake. If you rely on the DIY almond cream, you have a great base for spreads of all kinds.

What you should know about making almond cream

Take a little time. No matter which food processor you have, always (!) start on the lowest setting.

After a few seconds of mixing (it is written exactly in the two recipes), always take a break. Clean the puree with a spoon or spatula. Then you start again with the lowest level and slowly increase.

If you do not manage to make the Almond paste liquid you either had too little patience or the nuts were too dry from baking.

Let's assume that you have too little patience with the Make almond paste yourself have: put the cream aside, let it rest for 3 minutes and then start again on the lowest setting, after 30 seconds increase the power of the mixer.

Roasting makes it easier for the oil from the nuts to escape during mixing. Thus, the nut mass quickly becomes a creamy smooth mush.

  • 500 g Almonds
  • 1 Pinch Cinnamon

  • Preheat the oven to 120° hot air or 150° top/bottom heat.
  • Spread the almonds on a baking sheet and roast them for 5 minutes. Attention: With hot air the almonds can quickly turn black!
  • Let the almonds cool a little.
  • Puree the nuts at the lowest speed for about one minute. The result is a nut flour. If you like, you can now add a little cinnamon.
  • Press the nut mass back down from the walls of the machine.
  • Start with the lowest mixing speed and turn up after 30 seconds. It takes about 1.5 minutes until the almonds become mushy.
  • Wait 30 seconds and then mix again at the highest speed. Repeat the process until you have liquid almond paste.
  • Fill the cream into a sterile canning jar. In the refrigerator, the homemade almond paste lasts up to 3 weeks.

It is worth taking a look at it all the time. Almonds like to burn. By the way, the roasting time determines the creaminess of homemade almond paste. If the nuts are roasted too long, the oil evaporates. The almond paste becomes solid.

Tip: Prepare at least 500 g of almond paste. The blades of the food processor work better with a larger quantity and thus grind the almonds much better.

How to make white almond paste yourself

To be able to make white almond paste yourself, the shell must first be removed. This makes them taste less intense and therefore perfect for cakes, cookies and co.

Blanch almonds

For blanching, the almonds with their shells are briefly boiled in Boiling water given. Then rinse them with cold water. Now the shell can be easily removed from the almonds. This is best done with your fingers.

Now dry the almonds with a paper towel and set aside for a few minutes.

If you like, you can put the almonds in the oven. They then get the roasted aroma again and are easier to process.
