Coconut milk

If you don't have coconut milk, you can substitute it with cow's milk or a plant-based drink.

Cocoa

Preheat the oven to 180° Celsius.

Crack eggs

Separate the eggs. Put the yolks in the first bowl and the whites in the second. Add half of the birch sugar to the yolk and the rest to the egg white.

First beat the egg whites with a mixer until stiff. Stir until the snow becomes really firm.

Scrape out the vanilla bean. Cut it in half lengthwise and scrape off the pulp with a butter knife. Add the vanilla pulp to the egg yolk.

Beat the egg yolks with water, sugar and vanilla.

Melt coconut oil

Mix ingredients

Now add the coconut milk.

Finally, fold the beaten egg whites into the mixture. Please do not use a mixer, but a dough scraper.

If you feel that the dough is too firm, add another sip of water.

Mix dark mass

Divide the dough into two halves. With one half you add the Cocoa powder* for this. Try it with a little at first Cocoa powder* and then increase slowly.

You can decide for yourself how much cocoa to add. The more cocoa, the darker and more tart the dough will be.

If you stir in a lot of cocoa, the dough may become firmer. In such a case, simply add a sip of water or coconut milk.

Bake low carb marble cake
