Time for chocolate cake! More specifically, sweet potato brownies! Sounds a little strange, doesn't it? But the result will more than convince you. This moist cake is sugar-free, vegan, and uses no flour. This will be your new favorite cake!

If there's one vegetable that's absolutely in, it's sweet potatoes. They are served as a side dish, turned into soups, mixed into salads and now also turned into the most chocolatey cakes in the world.

Right off the bat, if you're worried that your sweet potato brownies will taste like vegetables, let me reassure you. That's guaranteed not to happen. The nuts and the Cocoa powder* mask the vegetable flavor - only the pleasant sweetness of the tuber comes through.

Speaking of sweetness, I use a little honey for that. So these are sweet potato brownies without dates - mainly because I didn't have dates on hand and because I'm not a particularly big fan of the dried fruit.

Today I want to show you which cake is guaranteed to make it among your personal favorites. In the office he could convince absolutely all and that, although they did not even know what they actually eat there :)

What ingredients do I need for sweet potato brownies?

Before we get right to the recipe, let's take a look at the ingredients. After all, you should know what you're eating. I'll also give you alternatives for certain ingredients in case you don't have them on hand.

Sweet potatoes

The most important ingredient in this recipe is the sweet potato. Brownies, healthy eating and sweet potatoes don't really have much to do with each other at first glance. But once you've tasted them 1x, you won't feel like eating regular chocolate cake at all. Promise!

Because the sweet potatoes provide an incredible consistency. The orange tuber makes the brownies mega juicy and soft. Their pleasant sweetness ensures that we need very little honey.

In addition, the small chocolate cakes do not need to hide visually. The yellow-orange rasps of the batata make the cake a real eye-catcher. If you like, you can make the rasps a little thicker to provide a visual highlight.

If you don't tell your guinea pigs what's in the batter, they won't guess. Unless they're already infected with the sweet potato brownie virus themselves.

The yellow to orange tubers are a good source of minerals and vitamins. You'll find manganese, folate, copper and iron in them. Also vitamins C, B2, B6 and E.

Mixed with high quality fiber, batata is a great food that you should definitely pay more attention to.

Because the tuber is also associated with the prevention of cancer, arteriosclerosis, rheumatism, Alzheimer's disease, Parkinson's disease, cataracts and other diseases.

Coconut oil

It brings a delicious coconut flavor to the dough, which can be combined with Cocoa powder* and sweet potato does very well. If you don't have Coconut oil* on hand, you can replace it with margarine. 60 grams Coconut oil* can be replaced by 100 grams of margarine.

However, it can then be that the certain something is missing in terms of taste. If you have coconut flakes in your pantry, stir in 1-2 tablespoons to compensate. Watch the consistency of the dough, you may need to use a little more margarine to compensate for the coconut flakes.

Eggs

They ensure that the dough holds together after baking. If you don't have eggs at home or can't tolerate them, you can use fruit puree. Applesauce is the perfect substitute for eggs and also does very well in the dough for the brownies from sweet potatoes and already the recipe is vegan.

Honey

The sweetness of the orange tubers is not enough to make a good batter. That's why honey is added to my sweet potato brownies. It is the most natural sweetener in the world. If you don't have any honey on hand or are on a vegan diet, you can use maple syrup.

Nut flour

Coconut flour* and Almond flour*? You can also use just one of these two flours, the recipe is guaranteed to work. I didn't have any the other day Almond flour* at hand and only Coconut flour* - it made no difference.

I like to mix these two flours to get a nutty coconut flavor in the chocolate cake. By using nut flour, I avoid white flour and thus gluten, which I don't tolerate as well.

In addition, nut flours offer many more valuable nutrients than white flour - above all very healthy fats. You don't need much of it, because nut flour binds a lot of liquid. Therefore, it cannot be replaced 1:1 with white flour.

Another option to replace nut flours is oat flour. You can make this yourself by processing oat flakes into flour in an electric coffee grinder. However, you can't use this 1:1 either, so you'll have to experiment a bit - I haven't tried it yet.

Cocoa powder

Reach Baking cocoa* when preparing a chocolate cake. It provides extra chocolatey flavor. Classic breakfast cocoa consists mainly of sugar and never manages to add as much chocolate flavor to the cake.

Especially novice bakers confuse breakfast cocoa and Baking cocoa* with pleasure. By the way, my favorite drink: ripe banana, Baking cocoa*, peanut butter and oat milk. Give it a try!

I particularly like the consistency of the sweet potato brownies without sugar, which they get through the potato puree. So really nice chewy and juicy. If you want, you can spread the cake pieces after baking with a homemade hazelnut cocoa spread and provide even more chocolate flavor.

Brownie recipe

Recipe: Sweet potato brownies (without dates)

Ingredients

Also: scale, vegetable peeler, vegetable grater, bowl, pot and baking dish.

My baking pan is 30 cm long, 20 cm wide and 3 cm deep.

1. prepare sweet potatoes

Preheat the oven to 180° top-bottom heat before you start.

Peel the sweet potatoes and wash them if necessary. The larger the tubers, the easier the next step.

Grate the orange tubers with a vegetable grater into a bowl. Alternatively, you can use a food processor with a grating attachment.

Put the grated sweet potato in a bowl.

2. melt coconut oil

Cradle the Coconut oil* and put it in a small saucepan. Turn up the temperature and melt it. Caution: do not let it get too hot! If you prefer, you can also melt the oil in a cup in the microwave.

3. mix ingredients

Give eggs, honey, Coconut oil* and Cinnamon* to the grated coconut and stir the ingredients together. This works very well with a fork or a whisk. You don't need a mixer for this.

Lift the Cocoa powder* under.

Now come Baking powder*, Almond flour* and Coconut flour* to this. Stir the ingredients together well.

4. bake sweet potato brownies

Line the baking pan with baking paper. If you don't have baking paper, grease the pan with melted coconut oil.

Pour the batter into the baking pan and spread it evenly.

Bake the brownies for 25 to 30 minutes at 180°.

How to serve?

  • LukewarmSweet potato brownies are especially delicious when they are lukewarm. You can put them briefly in the microwave or eat them after a short cooling time when they come out of the oven.
  • Cream: Chocolate and cream belong together for many, like the summer and the sun. A little (vegan) cream is optimal for these chocolate cake pieces.
  • Berries: If you like it fruity, you can also eat fresh berries with the cake. Likewise, you can use a fruit compote or applesauce.
  • Nut puree: Looking for a nutty kick? Then add a little peanut butter to the brownies.

And actually, anything you like goes with the cake anyway. If you want to treat yourself, take a scoop of vanilla ice cream.

How can I refine the chocolate cake?

  • Chopped nuts: Sprinkle a handful of chopped nuts into the batter or place them on the batter before baking. Oat seeds, almonds, hazelnuts, walnuts are good.
  • Coffee: You can add a teaspoon of coffee powder to the recipe. This enhances the chocolate flavor and provides a light coffee note.
  • Vanilla: Vanilla also goes very well with cocoa and sweet potato. Half a vanilla bean or a teaspoon of vanilla extract provide the perfect taste.

Can you store and freeze the cake?

Let the sweet potato brownies cool completely and then store them in an airtight box in the refrigerator. Because of all the moist ingredients, the cake can quickly begin to mold. The brownies will keep in the refrigerator for about 5 days. A day after baking, they are best because the ingredients really soak through.

If you've made too much or are making stock in case you ever get a craving for sweets, you can also freeze the cake. Cut the brownies into pieces and freeze them individually. When they are firm, you can put them together in an airtight container.

What's so special about sweet potato brownies?

These vegetable brownies are gluten and sugar free. I do not use white flour. As a substitute for normal flour hold almond and Coconut flour* here. However, we only need 1 tablespoon of this. The base consists of sweet potatoes.

This has the advantage that the sweet potato brownies become super moist. How much honey you use for the chocolate cake is up to you.

And also all those who suffer from gluten intolerance can help themselves. Almond and coconut flour are gluten-free.

In the presented recipe there are no "empty" calories, as they are found in classic sugar and flour recipes. The brownies contain many valuable ingredients such as fiber, omega fatty acids, vitamins and minerals.

If you like, you can fill the dough into muffin tins. Pay special attention to the baking time - it is reduced by about 5 minutes.

The batata

The sweet potato originates from Central America and has a deep orange, bright purple or white flesh. In addition to its appearance, it scores with an excellent nutritional profile. It contains abundant vitamins A, E and beta-carotene, supporting vision, skin and hair.

Sweet potatoes are also a good source of fiber, which keeps you full longer and aids in digestion. They are full of potassium, magnesium and calcium.

Because of its high natural sugar content, it has a sweet flavor - but because of its low glycemic index, this does not cause blood sugar levels to rise as quickly as with regular potatoes or white flour.
