A little sugar here, a little flour there, and then another load of flour and sugar. Finished are the fatteners.

But I have a better recipe for you today. One that works without flour and sugar. So a recipe for Low carb cookie cutter where we Simply replace household sugar and flour. This is quite simple and not witchcraft.

Let's take a closer look at the ingredients you need. I'll tell you what makes them so special and how you can substitute them if you don't have them at home.

Exchange flour for almond flour

I am convinced that the cookies taste better without flour. White flour simply tastes like nothing.

One of my absolute favorites is Almond flour*. It already adds a nutty flavor to the low carb butter cookies. You don't need many more spices.

Almond flour is super healthy. It has lots of protein. The taste is slightly nutty. It contains good fats. Almond flour is gluten-free. It has fewer carbohydrates than wheat flour and is often used if you want to lose weight. It is rich in vitamins. I love it in my recipes!

You cannot replace almond flour 1:1 with grated almondsreplace almond flour *. Almond flour is de-oiled, which is the only way to keep the dough firm.

Do you decide for grated almonds*, it will be very greasy and the dough will fall apart.

If you don't have almond flour to hand, try these alternatives:

  • Hazelnut flour: It can be substituted 1:1, has a similar fat content and texture. However, the taste is nuttier.
  • Sunflower seed flour is a good alternative for anyone with a nut allergy. It can be used 1:1 in most recipes.
  • Coconut flour*: Is much more absorbent than almond flour. You can replace one cup of almond flour with 1/4 to 1/3 Coconut flourreplace *. However, you will need to add additional liquid. Not suitable for beginners - you need to have a good feel for the consistency of the dough!
  • Cashew flour: It tastes very similar to almond flour. You can substitute it directly in many recipes. The fat content is Cashews* but higher.

Xylitol as a sugar substitute

Instead of household sugar, I like to use Birch sugar* (Xylitol*). It is made from birch wood or Cornstarch*. It is considered healthier because it does not cause the blood sugar level to shoot up so sharply and thus prevents cravings.

Table sugar can cause blood sugar levels to rise quickly. This can lead to energy slumps. Too much household sugar makes you fat. Birch sugar* on the other hand has a low glycemic index. It is digested and absorbed more slowly.

Therefore Birch sugar* is often the healthier choice compared to normal sugar.

Furthermore contains Xylitol* much fewer calories and carbohydrates than normal sugar. You won't notice any difference in taste.

If you can't find any in your store cupboard, you can also Erythritol* use. It may taste less sweet to some people than Birch sugar*. I hardly notice any difference. If you are unsure, you can bake a test cookie and taste it. Or you can sprinkle powdered sugar on the cookies later.

If you also opt for reindeer, they will be given a fluffy sugar coat.

Almond paste

Now we need fat so that the dough holds together. Most cookies are made with butter or margarine. If you buy nut butter, it's quite expensive, but you can use about Make your own almond butter easily!

If you don't have almonds or almond butter to hand, you can try using butter or margarine. But there are a few things to bear in mind. Almond butter adds flavor to the recipe. Butter and margarine are more neutral.

Almond butter provides a softer consistency in most recipes. It has a higher fat content. You may therefore need more butter or margarine.

In general, however, simply replace almond butter 1:1 with butter. Keep an eye on your dough. You will quickly notice if it is too dry and crumbles when you roll it out. You will also notice if it is too greasy. I recommend using almond butter or another nut butter.

Hazelnut butter is a particularly good choice. Peanut butter is also an option, but it distorts the taste of the almond flour.

Since most Low carb cookies look very serious, I thought to myself that it must also be fun and colorful. I'm definitely blown away and have really fallen in love with the red noses, the thick bodies and the antlers.

However, I cheated with the chocolate lentils. I couldn't find any chocolate lentils that don't contain sugar. But there are normal chocolate lentils that are free from carbs that you can use instead.

For the antlers, I used one of my low carb chocolate spreads (similar to Nutella) - the disadvantage: it doesn't set. If you prefer, you can melt sugar-free chocolate and then apply it to the cookies with a toothpick.

Recipe: Shortcrust cookies with almond flour

Are you ready to get started? Now that you've got all the ingredients, nothing can stop you. 💪

By the way, I divided the dough into two parts and filled one part with Cocoa powder* colored. This makes for a colorful and varied plate. Because I only have a little Cocoa powder*, there is hardly any difference in taste.

Here you will find a very detailed recipe. It is aimed at anyone who has never baked low carb before or is trying their hand at cookies for the first time. If you bake regularly, you will find a recipe at the end of the article. Short version of the recipe.

The ingredients are enough for about 10 reindeer-sized cookies.

Ingredients for the cookie dough:

  • 1/2 vanilla bean
  • 100 g almond butter
  • 80 g almond flour
  • 25 g Xylitol*
  • 1 pinch salt

You still need a bowl, a scale, a hand mixer, a baking tray and baking paper.

Prepare the vanilla

Cut the vanilla pod in half lengthwise with a sharp knife. You can now see the vanilla pulp. Scrape it out with a teaspoon.

Put the vanilla pulp in a bowl.

Tip: Don't throw away the vanilla pod. Cut it into small pieces, mix it with sugar and pour the mixture into a jar. Put the mixture in a dark place and leave it to stand for about a month. The sugar or sugar substitute absorbs the vanilla flavor! It becomes even more intense if you now pour the mixture into a powerful food processor* and grind up the rest of the pod.

Add the almond butter and almond flour

Now add the solid ingredients to the bowl. First the almond butter and at the same time the almond flour. Mix with a hand mixer (use a dough hook!) until a uniform mixture has formed.

If you like, you can pass the almond flour through a sieve to avoid lumps. However, I have never had this problem and therefore don't do this step.

Now come Xylitol* and salt into the bowl. A mixer with little power will now reach its limits - if this is the case for you: continue kneading with your hands. This works best in a large bowl or directly on the work surface.

Form a ball. Wrap it in cling film. Put it in the fridge. Leave the dough to rest for at least 30 minutes.

Heat oven

In the meantime, you can prepare everything you will need later. Cookie tins, rolling pin, baking paper and baking tray, almond flour to sprinkle on the work surface and possibly a spatula. What is the spatula for, you ask? I use it to lift raw cookies onto the tray and prevent them from deforming or falling apart.

This is particularly helpful for large cookies.

Now heat up the oven. We need 170° top-bottom heat.

For later, after baking, you will also need

  • about one tablespoon of chocolate spread
  • 30 chocolate lentils

Take the dough out of the fridge and leave it to warm up for about 15 minutes. This will make it smoother and easier to shape.

Sprinkle a little almond flour on the work surface and on the rolling pin.

Knead the dough. If you like, you can divide the dough in half and add 1/2 to 1 tsp Cocoa powder* fold in. If you want to do this, cut out the light-colored dough first and then the dark-colored dough. This is important so that the light-colored reindeer do not turn brown.

Form a ball and roll out the dough.

The dough should be about 0.5 cm thin.

Dip the cookie cutter in almond flour and repeat this step after every second cookie. This will prevent the dough from sticking to the tin.

Place the cookies on the baking paper about 2 cm apart.

Bake low carb cookies

The cookies in the size I made them (about 8 to 10 cm in diameter) need 10 minutes in the oven. If your cookies are smaller, the baking time will be reduced accordingly.

Do not bake them for too long, as this will make them dry.

Now you have to let them cool completely. I set them aside for two hours so that they are really cold. If you bake in winter and want to speed up the process, place the cookies outside. A little tip: protect them from cats and birds 😄

Decorating shortcrust cookies

Now you can let off steam. I used chocolate lentils for the nose and painted on the antlers with chocolate cream. Whatever you like is allowed. You can search for fun cookie designs on Pinterest and get inspired, there are some really great ideas!

Unfortunately, sugar writing always comes with sugar. But if you feel like it, you can also make your own sugar lettering without sugar. Here's what you need:

  • 1 egg white
  • 100 g powdered sugar
  • 2 tablespoons lemon juice

Beat the egg whites with a hand mixer until stiff and slowly add the powdered xylitol. Stir until the mixture thickens and looks glossy.

Allow the lemon juice to drizzle in between. And now you have a low carb icing that looks great. The best way to apply it is with a piping bag.

When I think back a few years - ok, a few many years - to the pre-Christmas season, the first thing I see in front of me are shortbread cookies. Cookies that I decorate together with my brother. Okay, he just eats them. But I really try hard.

My mother rolls out the dough and then we can start. We bake little teddy bears, little horses and fir trees. As soon as they come out of the oven, they are drowned in loads of sugar sprinkles. Not very healthy.
