Fancy a delicious carrot cake from the tray? I'll tell you my favorite recipe for a juicy low carb carrot cake that really works for everyone.

Are you ready to make a super delicious carrot cake? Today I want to share with you a recipe that I have been making for many years.

For me, it was initially a typical Easter cake. However, that has changed. Now there is it every now and then, because it is so quick and easy to prepare.

You need only a few handles, hardly any equipment and also no previous knowledge for the low carb carrot cake.

I prepare it as a quick sheet cake. If you like, you can also pour the mixture into a round springform pan and then put a frosting on top.

What ingredients do I need for the low carb carrot cake?

Before we get right to the recipe, I'll tell you what ingredients you need and what you can substitute them with if you don't have them at home.

Carrots

Logical. What would a carrot cake be without carrots? By the way, if you see somewhere a recipe for carrot cake - it's just another term for carrots, which is very common, especially in Switzerland.

To get the carrots into the right shape and size, you will need a vegetable peeler as well as a vegetable grater. You can also use a food processor with a special insert to chop the carrots into small sticks.

The recipe is optimal when you have carrots over or they are already starting to get soft. Put soft carrots in cold water for about 2 hours and they will be like fresh again!

The vegetables give the cake not only the typical color, but also an incomparable juiciness.

By the way, you should include carrots in your diet more often. They contain a lot of provitamin A, folic acid, iron, potassium, magnesium, copper, manganese, sulfur and pectin. Therefore, they are one of the very valuable vegetables that we should eat regularly.

Hazelnuts

There are many low carb carrot cake recipes that rely on almonds. I don't. I prefer hazelnuts because they have much more flavor.

They are also said to be healthier than almonds.

Like all nuts, you'll find plenty of healthy fats, i.e. unsaturated fatty acids, in them. This makes them very valuable for our body, but at the same time high in calories. So you should not overdo it with desserts if they contain a lot of nuts.

Hazelnuts are packed with minerals and vitamins. They are considered an excellent source of high-quality protein and contain important fiber.

Alternatively, of course, do almonds. However, almonds do not have as much flavor of their own. You must therefore be prepared with a little more Cinnamon*, which brings me straight to the next ingredient.

Cinnamon

Cinnamon* and nuts - there is no better combination. If you don't have Cinnamon* at hand, then see if you can Gingerbread spice* can be found. It consists to a large extent of Cinnamon* and adds even more flavor to the low carb sheet cake.

Eggs

There is hardly a low carb recipe that does without eggs. No wonder. They are packed with healthy fats and ensure that the mixture binds together during baking.

Baking powder

It gives a boost to the carrot cake. Who does not Baking powder* at hand, you can also use conventional Baking soda* use. One teaspoon Baking powder* makes half to three quarters of a teaspoon Baking soda* from.

Sweet

If you bake and cook low carb, you naturally do without household sugar. Instead comes either Erythritol* for use or Birch sugar*. Erythritol* However, it has the advantage that it is completely calorie-free. So if you are watching your calories, I recommend this sugar substitute.

Birch sugar* is very popular in low-carb cooking. It mainly forms fatty acids during digestion and is not metabolized as quickly as simple sugars. Advantage: It contains around half the calories of household sugar.

Good to know: I use quite little sweetener. It may be that the cake therefore seems too little sweet for some. If that is the case, you can help after baking with powdered sugar or prepare a sweetened frosting.

Recipe: carrot cake from the tray

Here you will find a very detailed tutorial. It is intended for those who do not have much baking experience. For those who bake regularly, there is a short version of the recipe at the end of the post with exact nutritional information per serving.

The recipe is enough for a medium baking sheet. Mine is about 30×23 cm. But you can also use a larger or smaller one - just adjust the baking time accordingly. But more about that later.

Ingredients

Also: 2 bowls, a scale, whisk or mixer, dough scraper, tray, baking paper.

Preparations

Heat the oven to 180° top-bottom heat.

Line the baking sheet with baking paper - this way you can easily remove the cake from the pan later. If you like, you can use a reusable baking paper.

If you don't have baking paper at home, grease the baking pan properly with butter or Coconut oil* in. I also sprinkle grated hazelnuts* into the mold to prevent sticking.

Prepare carrots

Remove the skin from the carrots with a vegetable peeler. Cut off the ends and tips and grate the carrots. Use a vegetable slicer that is not too fine. If you shave very finely, you will get mush rather than nice shavings.

After all, we want you to be able to see some carrot pieces later. Who one powerful food processor* can be used to bring the carrots to the perfect thickness within seconds.

The quantity given in the recipe refers to the grated carrots! Therefore, weigh them again. It may be that you need another carrot.

Set the shredded carrots aside.

Mix ingredients

Important: The butter must be at room temperature - that is, soft. If it is hard, it cannot be mixed well. In such a case, place it briefly in the sun or put it on the heater. You can also heat it in the microwave for 10 seconds - but no longer, otherwise it will become liquid and boil!

Mix eggs, cottage cheese and butter in a bowl. Mix them with a whisk or hand mixer until smooth.

Now come the grated hazelnuts, Birch sugar*, cinnamon, Baking powder* and salt. Stir again until you have a nice, even dough.

Fold in the shredded carrots with a dough scraper.

Pour the finished batter into the baking pan and spread it evenly. This works best with a dough scraper.

Baking

Depending on the shape, the cake needs 30 to 45 minutes. The thinner you put the dough on the tray or in the mold, the faster the cake is ready.

Do the chopstick test. To do this, take a toothpick and poke it into the center of the cake - if the dough is not yet ready, sticky dough residue will remain on the toothpick. In this case, your low carb carrot cake needs a few minutes longer.

Tip: My old oven bakes very unevenly. Therefore, I turn the cake halfway through the baking time. Otherwise, the cake is dark on the back side and not through in front. So turning is worth it!

How can I prepare a frosting for the low carb carrot cake?

You lack juiciness or you have the feeling that something comes off? Then frosting can help. It also makes the cake a little more visually interesting.

A quick low carb frosting is made from sour cream, natural yogurt and Birch sugar*. If you like, you can also stir in freshly grated lemon zest.

The downside is that the frosting dries out in the fridge. If you need the cake for later, I recommend another topping.

Mix about 6 tablespoons of powdered sugar with 2-3 tablespoons of water. A little lemon juice neutralizes the sweetness. Pour the frosting on the cold cake - it will set and keep the cake moist.

What makes this carrot cake so special?

First of all, carrot cake is low carb - very low in carbohydrates. But you will find healthy fats, many vitamins and minerals.

But the carrots and nuts can do even more. According to various researches, they make us beautiful. The healthy fats from hazelnuts and other types of nuts have a positive effect on hair, skin and nails. They provide more shine and are even said to promote hair growth.

And then we have a considerable amount of carrots. They are considered a true beauty food. The carotenoids color the carrots orange and act as andioxidant molecules (antioxidants) cell-protective. The contained vitamin A protects the skin from aging and is involved in cell renewal.
