Today I'm going to share with you a recipe for very simple and quick cookies, for which you don't even need a mixer. You just stir the ingredients together with a fork and it's off into the oven.

With these delicious oatmeal cookies, you can replace the unhealthy cake that usually comes at work. They taste great all year round and are a great way to use up overripe bananas.

In a few minutes, the cookies are also ready. They succeed even for baking beginners. You don't need any cookie cutters or other equipment. Except, of course, a baking tray.

What ingredients do I need for oatmeal cookies without sugar and flour?

I already have some Recipes for oatmeal cookies tried out. Many were dry and hard - or as they say, crunchy. That's not the case with this cookie recipe. These oatmeal cookies have a soft consistency and are super soft.

Before we get straight to the recipe, I would like to say a few words about the ingredients. I'll tell you here which ones you can substitute if you don't have them on hand.

Bananas

The riper the bananas are, the more flavorful the cookies will be. If you regularly have brown bananas at home, then you can quickly turn them into something delicious with this recipe.

If they are very ripe, just a fork is enough to turn them into mush. If they are not yet so ripe, then reach for a Blender*. Under no circumstances should you use bananas that are still quite green, as this will make the cookies bitter.

Tip: I cut overripe bananas into small pieces and freeze them. If then times the desire for a smoothie or cookies emerges, then the recipe is quickly implemented.

Anyone who has ever baked with bananas, knows the pleasant sweet and fruity taste certainly. In combination with the eggs, they provide the soft consistency.

Eggs

The eggs ensure that the dough gets and stays in shape during baking. They give it juiciness and bind the ingredients together. If you want to make the dough without eggs, you can try using the Replace eggs with applesauce. 

I have already done this with many recipes and was always amazed at how well it works. However, I have not yet tried it with the oat cookies.

Oatmeal

Use Fine leaf oatmeal* for baking. They are smaller and don't have such a brutal effect on the cookies. If you only have very coarse flakes, you can chop them coarsely in a food processor or with a knife. But be careful: not too small, otherwise it will turn into oat flour.

We need flakes, not powder, to provide more bite.

If you don't have oat flakes, you can use spelt flakes - but you have to chop them up first, otherwise they are too coarse.

Equally well suited are deoiled Soy flakes*.

Nuts

My favorite for the oatmeal cookies are grated hazelnuts*. They are so good for this because they add flavor to the cookies. You are also welcome to use almonds, but they have significantly less flavor, so you may need to add more flavor here. Cinnamon* have to help out.

If you like to add more bite to the cookies, roughly chop a few nuts and fold them in. Particularly well suited are next to hazelnuts, Cashews* or walnuts.

In the recipe, I add 50 g of hazelnuts. If you don't want that, just use more rolled oats instead.

Cinnamon

Banana and Cinnamon* - a combination that is unbeatable. Of course, the spice should not be missing in this recipe either. For those who don't Cinnamon*, who instead uses a little Cocoa powder* or very tasty for the cold season: Gingerbread spice*.

These oatmeal cookies are mega healthy, come without sugar and without flour. The perfect snack or cookie for breakfast. Depending on the size of the cookies you get 15 to 20 pieces.

Ingredients
 

  • 4 Eggs
  • 3 ripe bananas
  • 250 g tender oat flakes
  • 50 g grated hazelnuts
  • 1,5 TL Baking powder
  • 1 TL Cinnamon

Equipment

  • Fork

Anleitung

  • Preheat the oven to 180° top and bottom heat.
  • Separate the eggs and beat the egg whites until stiff.
    4 eggs
  • Mash the bananas with a fork. Add the egg yolk, oatmeal, hazelnuts, baking powder and cinnamon.
    3 ripe bananas, 250 g tender oat flakes, 50 g grated hazelnuts, 1.5 tsp. baking powder, 1 tsp cinnamon
  • Mix the ingredients into a dough. You can do this easily with a fork.
  • Gently fold in the beaten egg whites. The sugar-free oatmeal cookie dough is ready.
  • Line a baking sheet with parchment paper. Take one teaspoon per cookie and press the dough a little flat on the tray. Caution: The cookies will spread a little during baking. Better plan a little more distance!
  • The oatmeal cookies without sugar take about 20 minutes.

Tip: Roast oat flakes and nuts

If you want the flavor to come out even more, you should toast the ingredients for the oatmeal cookies. To do this, put the nuts and the oatmeal in a pan - important: without Oil!

Toast them briefly, stirring constantly. As soon as they start to get fragrant, take the pan off the heat and dump the oatmeal into a bowl. Let them cool briefly before continuing.
