Ingredients
 

  • ½ Vanilla bean
  • 3 Eggs
  • 500 g Low-fat curd cheese
  • 50 g Erythritol
  • 1 EL Lemon zest
  • 60 g ground almonds
  • 1 EL melted butter
  • 125 g Blueberries
  • 5 EL Almond slivers

Anleitung

  • Preheat the oven to 150° top-bottom heat.
  • Scrape out the vanilla bean. Set the vanilla pulp aside.
  • Beat the eggs with the curd until creamy.
  • Add erythritol to the recipe. Continue beating the mixture until it is really nice and creamy.
  • Now add vanilla pulp and lemon zest to the batter.
  • Fold in the ground almonds and melted butter.
  • Grease the baking pan. Sprinkle almond slivers on the edge and bottom of the baking pan.
  • Fill the cheesecake batter into the mold. Sprinkle the blueberries on the cake. And put it in the oven. The cake needs about 45 minutes at 150° top-bottom heat.

Birch sugar* is the good alternative if you don't have Erythritol* at hand. It has 240 calories per 100 grams, half as much as household sugar. The difference, however, is that Birch sugar* has no carbohydrates and is much less harmful to the teeth.
