And now a few words about the ingredients. They make our ice creams really healthy and delicious.

Ice cream with coconut milk

Coconut milk is a great alternative to cream. Very many ice cream recipes use cream to achieve a creamy consistency. But it works just as well with coconut milk.

The advantage of coconut milk is that it provides a very good taste in addition to creaminess.

You can buy coconut milk with fat contents from 15 to 60 %. The higher the fat content, the better it works. Light milk is not suitable.

100 g cream come to a proud 350 calories per 100 ml. So coconut milk ice cream brings not only more flavor, but also fewer calories.

Fresh fruit in vegan ice cream

Basically, you can replace the frozen berries with many other frozen fruits.

When making coconut milk ice cream with berries, it is important that they are frozen through. Only then the ice cream becomes creamy and firm. Otherwise there's just berry milk :)

In the frozen mix you will find mostly raspberries, blackberries, strawberries and currants. So you get the concentrated load of berry power in the homemade ice cream. Especially a lot of vitamins like A and C can be found in all these berries.

Unfortunately, it only became creamy and good in the ice cream machine. In principle, you can make vegan ice cream with plant milk or yogurt yourself by putting the mixture in the freezer and stirring it every hour. This way you break the ice crystals and get a reasonably creamy ice cream.

Sweetness for vegan ice cream

Coconut blossom sugar* has a slight caramel note, which goes very well with the ice cream.

But we also use it because it's not as unhealthy as table sugar. Coconut blossom sugar* keeps blood sugar levels constant. It is rich in potassium, magnesium, iron, zinc, sulfur and copper.

But here too, of course, it's the quantity that counts! Do not overdo it.

Alternatively you can also Birch sugar*, honey or Agave syrup* can be used. However, it is best if you simply use ripe fruit. This makes it even easier to make vegan ice cream yourself and saves you extra sweetness.
