It is hot. We are sweating, our heads are smoking. Now it's time for a little cooling down.

Homemade ice cream is a must. It tastes very refreshing with natural yogurt. You also have a desire for a fruity cooling? Then you've come to the right place.

I'll show you how to make yogurt ice cream yourself.

Popsicles also work without an ice cream maker without any problems and taste super delicious.

Can you freeze yogurt and eat it as ice cream?

Yes, you can put any yogurt in the freezer and freeze it. As ice cream, however, yogurt has less flavor than fresh - especially the sweetness is lost. Therefore, you help with pureed fruit, sweet fruit, honey or sugar.

Do not store yogurt ice cream too long in the freezer, because it can lose flavor. The flavor lasts for about 2 to 3 weeks - depending on the ingredient.

How do I get ice without crystals?

If you've ever made yogurt ice cream, you've probably noticed that it can form pretty large crystals. To get ice cream without ice crystals, you need fat in the mixture to act as a natural emulsifier. High-fat cream, milk, and yogurt prevent crystals from forming and make the mixture smooth. Therefore, it is not recommended to use low-fat yogurt.

A good cream ice cream or yogurt ice cream forms much fewer crystals than a milk ice cream because it contains more fats. Do not defrost and refreeze - this also promotes ice crystals in homemade ice cream.

What ingredients you need if you want to make yogurt ice cream yourself

Before we get right to the recipes, let's take a look at the ingredients. Because only if you know what's in the ice cream, do you know what you're eating. As someone who deals a lot with the subject of nutrition, I always find this very important.

We all know yogurt ice cream from the supermarket. It is packed with sugar, dyes and often preservatives. There can be no talk of healthy refreshment.

But as of today, that's changing. Because if you can make yogurt ice cream yourself, you have control over what ends up in your dessert.

Yogurt

The main ingredient is, of course, yogurt. Logical, right? 😄 If you're watching your weight, you can use a low-fat yogurt. It contains hardly any fat and therefore only 39 calories per 100 grams. A small drawback: The ice cream becomes a bit harder and forms more ice crystals.

Also delicious: Greek yogurt. It is firmer and creamier than conventional yogurts because the fat content is higher.

Vegans can use soy yogurt or reach for an alternative. My favorite of the dairy-free alternatives is almond yogurt. It is naturally slightly sweet and harmonizes wonderfully with all fruits. Also very tasty and vegan: coconut yogurt.

If you like it mega fruity, you can also use a fruit yogurt. But beware: Many of them contain a lot of sugar and are therefore not very healthy.

Attention: Mix Yogurt and kiwi not! Your ice cream will be bitter. Who still wants to make a kiwi yogurt ice cream itself, should reach for vegan yogurts and very ripe kiwis. Then it works without problems :)

Sweetener for low carb ice cream

When I make my own popsicles, I don't use table sugar. I'm convinced that I can save myself the work and just go to the supermarket. In addition, the ice cream is then also not healthy and not low carb.

But then it doesn't work completely without sweeteners. Our taste buds do not perceive very cold food as sweet - even when it is sweet. A watermelon that you eat normally seems sweet to you when you freeze it and eat a Watermelon sorbet you prepare from it, will seem much less sweet to you.

In short, we need something to sweeten the yogurt ice cream.

Because household sugar is eliminated, you can turn to alternatives. You can replace white sugar 1:1 with Birch sugar* or Erythritol* replace.

Birch sugar* has a positive effect on dental health, combats caries bacteria and has only half the calories of sugar. If you're really only interested in the calories, take Erythritol*, which is sugar-free.

Honey or maple syrup are also possible. Just pay attention to the taste. If you like a caramel note in the popsicle, take Coconut blossom sugar*. But beware: it does not go well with every fruit.

By the way, replacing household sugar with brown cane sugar does nothing. Brown sugar is just as unhealthy like white sugar.

Fruit in yogurt ice cream

The riper the fruit, the better it tastes. Since the yogurt itself tends to be sour, I recommend using sweet fruit. Make sure that it is really ripe, then you can save some of the sweetener.

If you want to make your own yogurt ice cream, you can cut the fruit into small pieces or puree them. If you decide to use pieces: Keep them small, it's not so pleasant to have to chew large cold fruits.

For DIY ice cream I like to buy overripe fruit in the supermarket. It is very cheap to get and so has the chance to still be transformed into something delicious. My absolute favorite is overripe mango in combination with Greek yogurt.

These yogurt ice cream recipes are

  • can also be prepared vegan,
  • Low carb suitable,
  • packed with vitamins and nutrients,
  • pleasantly cooling,
  • sugar free and healthy,
  • prepared in the twinkling of an eye
  • And a great way to use up overripe fruit.
