Ingredients
- 1 Cup Coconut milk
- 1 Cup Water
- 1 Cup Quinoa
- 1/2 Cauliflower
- 1 TL Vegetable broth powder
- 1/2 Kohlrabi
- 1 Tomato
- 1/2 Cucumber
- 2 Apricots
- 5 Radish
- 1/2 Confederation Herbs (dill and parsley)
- 1 Handful green salad
- 2 Spring onions
- Walnuts
- 1 EL Coconut blossom sugar
Anleitung
- Wash the quinoa and bring it to a boil with coconut milk, water and vegetable broth. Let it simmer for 15 minutes.
- Meanwhile, chop the cauliflower and grate it with a food processor. Put it aside.
- Chop kohlrabi, apricots, cucumber, radish, onion and tomato. Put everything in a bowl.
- Chop the herbs and add them to the vegetables.
- Pluck the green salad into small pieces.
- Add the cauliflower to the finished quinoa. Mix well and season with salt and pepper.
- Off with it into the glass. The first layer is the cauliflower quinoa salad.
- Now comes the vegetables and finally the green salad.
- On top come caramelized walnuts. For this, you put the nuts without oil in the pan. Roast them and then add 1 tablespoon of coconut blossom sugar. Stir well so that nothing burns. After one minute, the nuts should be ready.
- Now add the nuts to the salad. The dressing for your vegan quinoa salad consists of vinegar, oil and a little mustard. The dressing is added to the salad just before eating.
