Cauliflower brownies? Yes, you really did read that right. Brownies made with cauliflower may sound a little strange, but they are super delicious. With this simple recipe you can make a healthy chocolate cake without sugar.

Tired of cauliflower soup and cauliflower salad?

Then you should definitely try cauliflower brownies. Because cauliflower can be so much more than just a soup, side dish or sauce.

I recently tried brownies made with cauliflower and was quite surprised at how well vegetables make a delicious dessert. This chocolate cake is sure to be on my menu more often now.

By the way, there are many names for cauliflower. It is also called cauliflower, cheese cabbage, flowering cabbage, grape cabbage, minaret cabbage or Italian cabbage.

What's in favor of cauliflower brownies?

Quite simply, cauliflower is a great alternative to flour. In it you will find important nutrients and vitamins. And more importantly, very few calories. At 100 grams, you get just 22 calories.

On the other hand, cauliflower contains a lot of vitamin C and folic acid. But you will also find vitamin E, vitamin B1, B2 and B6 and beta-carotene. A good mixture to stay fit and healthy and still snack.

This is also ensured by the numerous minerals. 100 grams of cauliflower contain 280 milligrams of potassium. Followed by phosphate, calcium, sodium and magnesium. Cauliflower also contains iron and zinc.

With only 2 grams of carbohydrates per 100 grams of cauliflower, it is very popular in low carb cooking.

And let's be honest: In between, it's really fun to try something new. Especially when it tastes super delicious. And I can guarantee you that.

Cauliflower brownies are a great way to use up leftovers. I always have the problem that I do not manage to eat a whole head of cabbage. Every day one has then but not desire on it. If you combine it with Cocoa powder*Almond milk, Coconut oil* and co. make it taste a little better again. 😅

PS: My guinea pigs didn't even realize at first that there was really cauliflower in the cauliflower brownies.

Cauliflower cake should not stay in the oven too long. The brownies will get dry if you do. If that happens to you, just grab a cup of coffee or tea to go with it.

Before we get right into it, I want to say a few words about the ingredients. After all, you should know what you eat and what you need to prepare.

Brownies one knows yes mostly only in the form of mega much sugar and white flour. But not this time, because this time I have come up with something great for you.

Cauliflower

We already had that: cabbage is very healthy. It contains many vitamins and minerals and at the same time very few calories.

The cabbage should definitely be fresh. You can tell by the leaves. Are they crisp or are they already hanging off the vegetable quite wilted? Cauliflower is usually ivory in color. If it has yellowish spots, that's a sign that it's been in the store or your fridge for a while. You can still use it then, but be sure to cut away the dark spots.

The fresher the cauliflower, the healthier it is. If it is stored for too long, nutrients and important ingredients are lost. So when you buy a cauliflower, be sure to use it up as soon as possible.

Almond milk and coconut milk

It makes the cauliflower cake so nice and juicy and brings the typical nutty-sweet taste to the plate.

If you don't have almond milk on hand, you can also use oat milk or soy milk. Of course, it also works with classic cow's milk.

The taste of almond milk complements perfectly with coconut milk. We need a little of it to melt the chocolate, more about that in a moment.

Coconut oil

Who is not Coconut oil* You can also use sunflower oil or rapeseed oil. But I recommend Coconut oil*, because it provides a delicious taste and combines well with the melted chocolate.

Chocolate

The darker the better. I take dark Chocolate without sugar*. You can find these in the supermarket among the diabetic products or online. These chocolates are usually made with Birch sugar* sweetened.

Alternatively you can Xucker chocolate drops* use. A high cocoa content in the chocolate ensures the beautiful color of the cake and the intense chocolate flavor that covers the cauliflower.

Hazelnuts and coconut flour

As an alternative flour come ground hazelnuts* and Coconut flour* in the recipe. You can replace the hazelnuts with almonds. However, the amount of coconut flour should remain the same. Because Coconut flour* binds liquids. It is particularly popular in low-carb cooking because it is rich in protein and gluten-free.

Since I replace classic flour, the brownies are also suitable for all those who suffer from gluten intolerance.

Other ingredients

It doesn't work without eggs - or does it? Who would like to prepare the cauliflower cake vegan, which can be Replace eggs with applesauce.  For a little flavor still provide Cinnamon*, Cocoa powder* and honey.

Important: You must Baking cocoa* use, no Cocoa powder* with which you prepare the breakfast cocoa.

A little Baking powder* ensures that the brownies rise nicely during baking and do not collapse. And that's all there is to it.

Would be a shame if the cauliflower is so healthy and then you use sugar, butter and co. That would destroy the sense of healthy vegetable brownies.

That's why I opted for alternatives when baking cauliflower brownies. If the dough is not sweet enough for you, you can use more honey, 1 spoonful of Xylitol* or Coconut blossom sugar* help.

Ingredients
 

  • 120 g Cauliflower
  • 120 ml Almond milk
  • 60 g Coconut oil
  • 150 g Chocolate with 90%igem cocoa content
  • 60 g Coconut milk
  • 3 medium eggs
  • 4 EL Honey
  • 130 g Ground hazelnuts
  • 40 g Coconut flour
  • 1 TL Cinnamon
  • 1 TL Baking powder
  • 15 g Cocoa powder

Equipment

Anleitung

  • Preheat the oven to 180° top and bottom heat
  • Chop the cauliflower very finely until hardly any pieces are visible. You can do this with a knife or a food processor.
    120 g cauliflower
  • Stir in the almond milk until you have a creamy consistency. Set the mix aside.
    120 ml almond milk
  • Heat coconut oil, chocolate and coconut milk in a saucepan until chocolate is melted.
    60 g coconut oil, 150 g chocolate with 90%igem cocoa content, 60 g coconut milk
  • Mix the cauliflower-almond mixture with the chocolate-coconut mixture in a bowl.
  • Add eggs and honey and mix with a mixer.
    3 medium eggs, 4 tablespoons honey
  • Put the dry ingredients in a bowl and then add them to the mixture. Mix the ingredients again thoroughly.
    130 g Ground hazelnuts, 40 g coconut flour, 1 tsp. cinnamon, 1 tsp. baking powder, 15 g cocoa powder
  • Spread the dough on the greased tray
  • Bake your cauliflower brownies in the oven for 25 minutes

Notes

Depending on the size of your tray and how thick you want your brownies, you'll end up with 12 to 24 pieces. I like them a little thicker and therefore took a small tray.

Can you taste the cauliflower in the brownies?

This question, of course, you ask yourself when you venture into a sweet cabbage recipe. And rightly so. After all, the effort should be worth it. It would be a shame if you didn't like your cauliflower brownies.

So, in a nutshell, no, you don't taste the cauliflower. At least it is not very dominant. You'll notice it very slightly in the finish. But only if you know it's really cauliflower. Otherwise, you can't taste the cauliflower from your little pieces of chocolate cake. Just give it a try. Maybe you'll get hooked like I did.

Much more than the cauliflower you taste the almond milk and the Cocoa powder*. The cauliflower brownies taste nutty and chocolaty.
