Quinoa salad with sweet potato

Ingredients
 

  • 100 g Quinoa
  • 2 Handful Arugula
  • 1 Tomato
  • 1 Handful Blueberries and pomegranate seeds
  • 1 Sweet potato
  • 1-2 EL Lemon juice
  • 2 EL Pumpkin and sunflower seeds
  • 1 EL Olive oil
  • Salt and pepper to taste

Anleitung

  • Wash the quinoa and bring it to a boil with twice the amount of water. Add a little salt to the cooking water.
  • Meanwhile, cut the sweet potato into cubes. Fry them with olive oil.
  • Wash and chop the blueberries, tomato and arugula.
  • Let the quinoa cool a little. It tastes especially delicious lukewarm.
  • Put all the ingredients in a bowl. Season with lemon juice and olive oil. A little salt and pepper brings even more flavor to the quinoa salad.
  • Finally, sprinkle some pumpkin and sunflower seeds on the salad. Ready :)
