They look like oversized mushrooms. And they taste just like them. We are talking about Portobello mushrooms. If you remove their stalk, they resemble burger buns.

So why not replace the unhealthy white flour buns with tasty mushrooms? Anyone looking for a tasty low carb alternative for buns will find Portobello Burger love. The mushrooms are made like burgers :)

For most Portobello Burger recipes, the giant mushroom simply ends up as a meat substitute in the burger bread. Not with us. We replace the burger bread with the mushroom and make delicious patties in it.

In combination with fresh vegetables and Avocado sauce the Portobello Burger tastes refreshing, is not heavy on the stomach and provides a lot of vitamins and nutrients.

And the very special thing about it? The burger is a real eye-catcher. You can vegan or prepare vegetarian. We have chosen a vegetarian portobello burger with cauliflower feta loaf decided. Yummy :)

To keep things from getting too complicated, the recipe is divided into "patties," "burger buns," and "stuffing."

Of course, you can also fill other meatballs in the burger. What is particularly good are vegetable patties, Quinoa roast, Lentil fritters or also Chickpea fritters.

Cauliflower fritters

Cauliflower is the superfood par excellence and fits perfectly in our burger.

Ingredients
 

  • 100 g Quinoa
  • 300 g Vegetable broth
  • 100 g Cauliflower
  • 100 g crumbled feta
  • 3 EL Wholemeal flour
  • 2 Eggs
  • 1 Handful chopped parsley
  • Salt, pepper, chili and curry powder

Anleitung

  • Rinse the quinoa with water and bring to a boil with vegetable broth. It takes about 20 minutes for all the water to evaporate, then the quinoa is al dente.
  • Meanwhile, cut 2 florets of cauliflower (this is about 100 grams). Chop the cabbage in a food processor and until it is the size of rice grains.
  • Put the cooked quinoa, shredded cauliflower, eggs, flour, feta, parsley, salt and pepper in a bowl. Knead the mixture with your hands. Leave to stand in the refrigerator for 10 minutes.
  • Form patties and fry the meatballs with coconut oil in a pan.
  • Set the patties aside and begin preparing the rolls.

Tip: If the dough is too wet, just add a little more flour.

Ingredients
 

  • 2 Portobello mushrooms
  • 2 EL Soy sauce
  • 1 EL Olive oil
  • 1-2 TL Sesame

Anleitung

  • Mix the olive oil and soy sauce in a bowl. It is best to use a soup plate.
  • Apply the mix to the portobello with a brush.
  • Sprinkle the sesame seeds on the mushroom bun.
  • Put it in the oven - preferably on the rack. The slats should point downwards. At 170° hot air the Portobello Burger needs about 10 minutes.

Attention: The mushroom loses water. Place a baking tray underneath. However, the mushroom itself lies on the grill. Otherwise it will swim in its own juice and become mushy.

A burger with patty and bun alone would be much too boring. That's why we came up with a delicious filling.

  • 1 Piece Red cabbage
  • 1 Pinch Coconut blossom sugar
  • 1 EL Apple cider vinegar
  • 1 Avocado
  • 1 TL Lemon juice
  • Lamb's lettuce
  • 1 Slice Tomato
  • Salt and pepper

Anleitung

  • While the rolls are baking, mix finely chopped red cabbage, apple cider vinegar, salt and coconut sugar in a bowl. Leave to infuse.
  • In another bowl, mash a ripe avocado with a fork. Add lemon juice, salt and pepper.

Assemble the Portobello Burger

Once the mushroom buns are ready, it's time to assemble the burger.

  • The first layer is a burger bun
  • On top you spread lamb's lettuce.
  • This is followed by a layer of red cabbage and the patty.
  • Then comes a portion of avocado sauce, the tomato and the lamb's lettuce.
  • The conclusion is a low carb bun. :)
