What ingredients make red lentil fritters vegan

Before we get started, I'd like to say a few words about the ingredients. After all, you should know exactly what you are eating.

Most people only know fritters with minced meat and onions. But the vegan and vegetarian cuisine have so many delicious flavors to offer. This time I have come up with something really great for you.

By the way: The inspiration for this recipe I have from the cookbook simply vegantastic cooking*, which you can order from Amazon. It contains 50 delicious vegan recipes that are very easy to prepare. Without a lot of frills or fancy ingredients. But with lots of delicious recipes.

The cookbook is good for vegan cooking beginners and advanced. If you want to bring a little more variety into your meals, then I recommend the book to you.

Lentils in the patties

Red lentils* mostly come from Turkey or India. In reality red lentils* a completely different color. They are simply peeled brown or purple lentils. The kernel of these lentil varieties is orange.

Red lentils* are cooked much faster than their relatives. One reason for this is that they are already peeled. A special plus point goes to pulses because you don't have to soak them.

The cooking time of red lentils is only 15 minutes. So they are perfect for quick cooking.

Lentils saturate for a very long time because they contain a whole load of complex carbohydrates. They are also packed with vitamins and minerals such as potassium, phosphorus, magnesium, manganese, nickel, zinc and selenium.

For those who want to lose weight or are athletic: Lentils provide a lot of vegetable protein. With 23 grams of protein per 100 grams of lentils are among the most protein-rich foods.

Onion and leek

So onion just always has to be. At least when I prepare something savory. The delicious frying aroma provides extra flavor and goes wonderfully with lentils.

Leeks behave in a similar way. If you fry it briefly, it even tastes a little like onion. No wonder, the two are related to each other. So leek and onion are added to the red lentil patties mainly because of their taste.

With leeks, by the way, it's very important that you slice them very finely.

Spices

Curry powder, salt, pepper, chili powder and ginger provide the appropriate seasoning for the vegan loaf. I find the combination of ginger and lentils particularly delicious. The spicy bulb gives the meatballs a great aroma.

If you don't like ginger, you can simply replace it with a bit more onion. But if you have a piece on hand, be sure to give it a try. Yummy!

Peas

Red lentil fritters become a visual eye-catcher when you add a colorful accent. I do this with the help of peas. Also suitable: finely grated carrots or small pieces of zucchini.

But it's worth adding peas to your diet. They are among the healthiest legumes and are packed with nutrients.

With what recipe succeed red lentil fritters

Are you ready and hungry? Then let's get started right away. If you've never made vegan patties yourself, here are detailed step-by-step instructions.

If you're a pro and have made veggie patties before, there's a short version for you at the end of the post.

Here comes the longer version for beginners and those who want to know exactly.

Ingredients

  • 100 g red lentils*
  • 1 onion
  • 25 g leeks
  • 1 cm ginger
  • 2 TBSP. Cornstarch*
  • 1/2 tsp curry powder
  • To taste: salt, pepper, parsley, chili powder
  • 25 g frozen peas

Also: board, knife, bowl, pan

1. prepare the lentils

Wash the lentils. For this I put them in a pot, pour cold water. Then I stir with my hands and put the lid on the pot.

Pour off the water and repeat the process 2-3 times.

Now boil the lentils with twice the amount of water. It takes about 15 minutes until they are cooked.

2. fry the onion and leek

Cut the onion into small cubes. If you like, you can use an onion slicer. Big advantage: no watery eyes when cutting onions.

You should cut the leeks into very thin rings. This works quite well if you use a very sharp knife.

Fry the onion and leek in a pan with a little oil. As soon as the onions start to color, remove the pan from the heat.

Cut the ginger into small pieces.

By now, the lentils should be ready. Pour off the excess water if there is any left - usually they should have absorbed the water and be soft. If you are unsure, taste a lens and see if it is soft.

If not, it will take a little while longer.

3. mix everything

And now it's going to be really easy. This is why I love red lentil fritters so much. The next step is to put all the ingredients (except the peas) in a bowl.

Knead the ingredients with your hands. Attention: The lentils may still be hot! Let them cool down a bit.

The Cornstarch* ensures that the mass becomes firmer and holds together. The amount of Cornstarch* depends on how much oil you used when frying the onion and how much water is in the lentil mixture.

So you may need more than 2 tablespoons. The dough should be easy to shape and not fall apart.

4. parsley and peas

At the very end, add the peas and parsley. The peas therefore at the end, so that they are not crushed. This would make no difference to the taste - but it's nicer on the eye.

Form loaves with your hands. You will need about 2 tablespoons of dough per loaf. If you wet your hands, the dough is easier to remove from your fingers.

Fry the lentil patties on both sides with a little oil. It is best to turn only 1x to prevent them from falling apart. And ready!

Very tasty with it is salad in all possible variations. But also potatoes and rice go very well with the red lentil patties.

Anleitung

  • Now add the chopped ginger, onion, leek, curry, pepper and salt. 
  • Knead the lentil mixture with your hands to form a uniform mass.
  • Add a little flour until everything is combined into a mass. You must do this with a little feeling. Because sometimes you need more flour and sometimes less.
  • Finally, add parsley and peas.
  • Form lentil fritters and fry them with a little oil on both sides in the pan.

Tip: The lentil patties also taste very tasty cold or warmed up. So: Just prepare at home ready and enjoy lentil fritters the next day at work :)

Why you need red lentils for the fritters

Honestly, there are two reasons for this. On the one hand, the visual aspect. As is well known, the eye eats with you. Red lentils - or even orange lentils - are visually simply more beautiful to look at than the khaki variant.

And on the other hand, red lentils are more floury. This means that they break down a little during cooking. And that makes them easier to form into patties. You almost don't need any other binding agent for this.

They are therefore ideal for red lentil fritters, lentil curry, as a side dish or puree.

However, the lentils lose some of their color during cooking. If you think you can make really bright orange patties from bright orange lentils, you'll be proven wrong.

But does not matter. The red lentil fritters taste even when there is little color left :)

Our conclusion

Red lentil meatballs are the perfect meal for the office. Once the lentils are cooked, the lentil and vegetable meatballs are ready very quickly. You can easily freeze them and are always prepared for stressful days.
