I love nut cookies. When we were kids, the first thing we did was snack on them from the cookie plate. This year, though, I want to watch carbs a little more. Do you? Very good!

Ingredients
 

For the nut base

  • 100 g Almond flour
  • 40 g ground hazelnuts
  • 40 g ground almonds
  • 1 TL Baking powder
  • 50 g soft butter
  • 2 Eggs
  • 10 g Xylitol

For the nut layer

  • 100 g Almonds
  • 100 g Hazelnuts
  • 1 EL Maple syrup
  • 10 g Butter
  • 1 TL Cinnamon powder

For the top layer

  • 2 Protein
  • 1 EL Xylitol
  • 80-100 g Dark chocolate with min. 80% cocoa content

Anleitung

  • Preheat the oven to 180°. Line a baking pan with baking paper.
  • We start with the base. Beat the eggs with the xylitol until stiff. Stir in the other ingredients one by one.
  • Spread the batter evenly into the baking pan. Now comes the layer of nuts.
  • Coarsely chop the almonds and hazelnuts.
  • Melt the butter in a pan. Add the cinnamon and maple syrup. Stir constantly until a uniform mass is formed. Caution: Do not let it get too hot!
  • Add the almonds and hazelnuts. Stir briefly and spread the nut mixture on the dough.
  • The low carb nut cookies need about 15 minutes in the oven.
  • Beat the egg whites with xylitol until stiff. Take the cookies out of the oven. Spread the beaten egg whites on top and put them in the oven again. Bake for about 2 minutes - until the egg whites start to color.
  • Let the low carb nut cookies cool for 5 minutes and then cut them up right away.
  • Melt the chocolate in a water bath and decorate the nut cookies with it. Done! :)

Swap sugar for xylitol

Chocolate yes or no?

Definitely yes. Even if you value a very healthy diet, you can still have a piece of chocolate in between meals. If you're a little more strict about it, you can of course do without chocolate.

We take extra sugar free dark chocolate*. You don't need to have a guilty conscience. Dark chocolate* is supposed to be super healthy :)

Do not forget the spices

What goes better with nuts than Cinnamon*? Absolutely nothing. That's why a lot of Cinnamon* in the cookies. By the way, cinnamon is a great fat burner and is even said to help with weight loss.

You can also still use peanut butter, vanilla, orange zest and co in the recipe. However, we keep it simple. The lighter and fewer ingredients, the better. There is more time to enjoy the low carb nut cookies :)

How to cut low carb nut cookies correctly?

Nut cookies without a triangle shape are not nut cookies. Right? :) They don't have to be perfect, they don't have to form a triangular shape, but at least they have three nice corners that you can dip in a little chocolate.

The trick is to cut the low carb nut cookies when they are still a little warm. Not hot, but lukewarm.

If you cut them cold, the corners may break off. And that would be a real shame.

Cut the dough first into rectangles. And then into triangles. For the chocolate, everyone handles it differently. You can either dip the corners or spread a little chocolate on the dough with a fork or spoon.

Refrigerated and in a cookie jar, the low carb nut cookies will last the longest. If you don't have a cool place to store them, prepare smaller quantities. They taste best fresh anyway.

Always put a lid on the cookie jar so the cookies don't dry out. I prepared 24 and took them to the office. Within 3 hours they were all eaten up. :)
