What ingredients do I need for low carb vanilla crescents?

Yes, but what actually makes the Kipferl now low-carb? It is the nuts and the Birch sugar*. In other words: we do without wheat flour and household sugar - which is found in classic recipes.

Swapping these two ingredients makes low-carb cookies really quick and easy.

Let's take a look at the key ingredients:

Birch sugar and erythritol

You can argue about the sweetness. It could be that these low carb vanilla crescents are not sweet enough for you. I always use very little sweetener when baking. Even if Birch sugar* is supposed to be healthier, it is still a kind of sugar. And I try to avoid it as much as possible.

If they are not sweet enough for you: You can either take more sugar or you sprinkle at the end Powdered sugar about the low carb vanilla crescents.

Whether you Birch sugar* or Erythritol* is up to you. Erythritol* has the advantage of containing no calories, so if you want to snack without a guilty conscience, you should opt for this sugar alternative.

Nuts instead of flour

Only one question remains: Vanilla flavoring or real Vanilla bean? Definitely vanilla beans! This tastes worlds better and more intense.

You will definitely notice the difference. Just try to bake half with flavor and the other with real vanilla. Then you can see the difference best. Once you've discovered real vanilla beans, you'll never go back to flavoring.

Powdered sugar

Vanilla without powdered sugar? No, that's not possible at all. :) But because classic powdered sugar is out of the question, there is a delicious alternative called powdered sugar. This is nothing different than Birch sugar* (or sometimes also Erythritol*), which is ground. This makes it look like classic powdered sugar.

You can use as much of it as you like in low carb cooking.

Ingredients
 

  • 100 g Almond flour
  • 60 g ground almonds
  • 100 g soft butter
  • 40 g Birch sugar
  • 2 Egg yolk
  • ½ TL Baking powder
  • 1/2 Vanilla bean scraped out

Equipment

  • Kitchen scales
  • Bowl
  • Baking tray

Anleitung

  • Put all the ingredients in order in a bowl. 
  • Knead them with your fingers to form a dough. The vanilla crescent dough must rest in the refrigerator for 30 minutes.
  • Preheat the oven to 160°. Line a baking tray with baking paper.
  • Bring the dough into a roll shape. Cut 1-2 cm thick slices from the dough with a knife. 
  • Shape it with your fingers to no croissants. Caution: Do not make the ends too thin, otherwise they will darken during baking!

What is the shelf life of low carb vanilla crescents?

So at least 4 weeks you can store the Kipferl without hesitation. Provided you do it right. That is: Cool and airtight in a Tupperware or cookie jar.

If you leave the cookies in the room, they will dry out quickly. If you want to prevent this, take them out into the cool.

If the cookies are already very dry, I have a great trick for you: The Low carb vanilla crescent become juicy again if you give them a half hour into the open air the lid. Preferably without a lid. So they take the humidity of the air.

This works best when it's raining, snowing or foggy outside. If you do not have the opportunity: Dipped in coffee, the cookies without carbohydrates also taste great :)
