What distinguishes a conventional coconut biscuit from low carb coconut macaroons? Quite simply: the type of sugar. While classic cookies contain lots of household sugar, the low carb version is different.

Here too, of course, sweetened. However, not with classic sugar, but with Xylitol* (also Birch sugar* or called Xucker) or Erythritol*.

You can buy these two sugar substitutes in classic form or in the form of fine powder as a substitute for powdered sugar.

Let's quickly take a look at the sewing values per 100 grams:

  • Sugar: 405 calories, 99.8 g carbohydrates

Lots of coconut

Egg whites make the cookies nice and fluffy. And Lemon zest rounds out the Low carb coconut macaroons recipe from.

If you like, you can still coat the low-carbohydrate cookies a little in dark Chocolate without sugar* dip. But it doesn't have to be. I have given it up. And can save a few calories again.

Vanilla bean also ends up in some macaroons. Feel free to try this. Vanilla and coconut go well together.

What is the shelf life of low carb coconut macaroons?

Coconut macaroons are Long lasting. I store them in a cool, dark place in a cookie jar. The Low carb coconut macaroons still taste like freshly baked even after 3 to 4 weeks. Except that it may happen that they become a little dry and hard.

But there's a great trick. I simply put the coconut macaroons on a plate and then outdoors for about 15 minutes. Attention: of course not in the sun and protected from birds.

The macaroons absorb moisture from the air and then taste like freshly baked again. This works best when it is raining, snowing or foggy outside.

If necessary, you can also just dip them in the coffee.

Our conclusion

Yum. Simply wonderful! I love this very simple and quick recipe for low carb macaroons.

In the end, you only need the unhealthy household sugar against Xylitol* or Erythritol* and you have low-carb cookies that taste delicious.

Have fun making it and good luck!
