We bake low carb buns with cream cheese! The ultimate recipe without carbohydrates to bake yourself - very simple, fast and incredibly delicious!

Life without bread is very difficult to imagine for very many. But what can you do if you want to watch your lines a little? Rolls without carbohydrates can be the solution!

If you eat bread or rolls, you can easily avoid carbohydrates. If you usually buy your pastries at the supermarket, then you'll probably struggle.

If you're ever lucky enough to find fitness bread on the shelf, it's terribly expensive.

All low carb buns that I have bought so far, were also not particularly tasty. But of course there's a solution for that too!

I just decided to bake my own rolls without carbohydrates. I show you now how you can enjoy juicy low carb buns with cream cheese.

What are the reasons for baking low carb buns yourself?

The low carb trend has arrived in many stores. There are shelves filled exclusively with products without carbohydrates. But even in these supermarkets, low carb bread is usually very expensive.

If you take your time and study the list of ingredients of these so-called fitness buns, you will lose your appetite. Because in very simple pastries there are quite a few ingredients and additives.

Above all, additives such as emulsifiers, acrylamide, several raising agents or acidifiers really don't have to be there. The other day there were low carb buns on the shelf with sugar in them. Completely pointless and not necessary.

What is also very cheeky: If you look closely at purchased fitness bread, you will see that the carbohydrate content is often just as high as in normal bread. The supermarkets lead us around at the nose and require for it still very much money. Really cheeky.

But this is not a problem, because Low carb buns can be easily bake yourself. The DIY fitness cookie delivers a full load of protein with hardly any carbohydrates.

So if you have the opportunity, you should simply bake your own low carb rolls with cream cheese. So you can be sure that you know what ends up in the dough. And especially what does not.

But today we want to make our own rolls without carbohydrates. Let's take a look at the ingredients. After all, you should know what you're eating.

I'll also tell you what ingredients you can substitute if you don't have certain ones on hand.

With these ingredients your low carb buns with cream cheese are ready in no time. And soooo delicious!

Psyllium husks

I use in this recipe Psyllium husks* as a binding agent. They give the rolls both firmness and fluffiness. Keto rolls without Psyllium husks* is difficult to bake because they often turn out very dry or fall apart when sliced.

There is a lot to be said for giving psyllium husks a chance. You can use the shells in the 500 gram package for many low carb recipes. Also in the vegan kitchen they occur as a substitute for eggs many times. You always need very little of them and get along for a long time.

In addition Psyllium husks* very healthy for the intestines. You can help with weight loss and rebalance the intestinal flora.

So: if you want to get into the low carb bread and roll business, the first step is to put a big batch of Psyllium husks* to.

You can replace them with Flaxseed*, Chia seeds* and allegedly also Cornstarch*, Almond flour* and rice flour - but I haven't tried this yet. So I can't tell you how this will affect the recipe.

Cream cheese and curd

In most low carb flourless rolls, cream cheese is used. It makes the rolls juicy and provides a load of protein in the recipe. If you like, you can use herb cream cheese.

I use neutral, low-fat cream cheese because then the rolls can also be used with sweet spreads and Low carb fresh fruit fit

However, quark provides even more protein. It really enhances the recipe and turns it into rolls that are also suitable for the keto diet.

If you don't want to use cream cheese, you can replace it 1:1 with cottage cheese.

Eggs in the keto buns

Even though we've already incorporated cream cheese and cottage cheese into the recipe, we need a liquid. Since Psyllium husks* As they absorb a lot of water and we need a link between the quark/cream cheese and the dry ingredients, eggs are just what we need.

By the way, they are also the ones who make sure that the buns later get such a beautiful brown color.

If you can't tolerate eggs, you can replace them with a larger amount of psyllium husks mixed with water.

Seeds and nuts

A colorful mixture of seeds and nuts provides the solid component of the rolls. You can combine them as you like. Just make sure that the quantity ratio remains the same.

In my recipe end up Chia*, Flaxseed* and ground almonds*. If you want more flavor, replace the almonds with hazelnuts or walnuts.

The nuts and seeds add healthy fats to the recipe that your body desperately needs.

Spices

I take salt, pepper, bread seasoning and a little garlic powder. But since tastes are different, you can use more or less.

Dried rosemary also does well in the recipe. In addition, I can imagine nutmeg or roasted onions well.

But the rolls without carbohydrates taste just as delicious as a cold snack. Or as a breakfast roll. You can actually pack everything you want into the fitness pastry. :)

The best recipe for low carb buns without flour

Are you ready? Then you can start right away. If you've never made your own rolls before, here's a detailed tutorial. If you've made one before and are just looking for recipe inspiration, then you'll find a short version at the end of the post.

Here comes the longer version with quite precise step-by-step instructions. The recipe is enough for six rolls.

Ingredients

Also: scale, bowl, baking paper, baking tray, powerful food processor*.

1. crush flaxseed and chia

The first step is to preheat the oven. 170° hot air is optimal. Alternatively: 180° upper-lower heat.

Give Flaxseed* and Chia* into the food processor. Grind them until you have a fine flour. Chunks may still be visible. This step is important so that the seeds can absorb the liquid better and swell up as an additional binding agent.

2. mix the ingredients

Now come flaxseed and Chia* together with the ground almonds and psyllium husks in a bowl. Stir them together with a spoon.

Follow with cottage cheese and cream cheese. Stir until you have a uniform mass. This works with a mixer, with a spoon or with your hands.

Add the eggs. The dough should now be slightly runny. Do not worry, it fits like this.

3. season the dough

In the last step you enter Baking powder*, salt, pepper, garlic powder and bread seasoning. Now set the dough aside at room temperature for 10 minutes.

Chia*linseed and psyllium husks now absorb the liquid and ensure that the dough becomes firmer.

4. form rolls

Place a sheet of baking paper on the baking sheet.

Wet your hands and form about 6 equal sized buns. Place them on the baking tray. If you like, you can now sprinkle the buns with seeds and nuts. I chose sesame seeds. Press the topping a little with your fingers.

5. bake the low carb buns

Off with it in the oven. The buns with cream cheese and cottage cheese now need about half an hour. Take them out of the oven and let them cool down.

Can you freeze the rolls?

Baking fresh rolls every time can take a lot of time. But you can also produce in stock and freeze the low carb buns.

To do this, you must first let them cool completely. Then they go into the freezer. I always put them in a tupperware box with a lid so they don't take on odors from other foods. With me these are mostly herbs or homemade herb butter, which have a very intense fragrance.

I don't recommend defrosting the rolls in the oven. They taste best if you just let them defrost normally. Put them on a plate in the kitchen for one to two hours.

If you then put them in the microwave for 10 seconds, they will get slightly warm and actually taste like freshly baked.

How long do they stay fresh?

That is difficult to answer. In my case, the rolls never managed to become dry. They were always eaten well before that.

Since there are a lot of fresh ingredients like eggs and cream cheese, I recommend using up the low carb buns with cream cheese within three days. Any leftovers are best frozen.

If you already see after baking that you will definitely not be able to eat all of it, then freeze some of it directly.
