What ingredients do I need for protein bread recipes?
If you want to bake a bread with a high protein content, you need high-quality protein sources. In most cases, they also contain healthy fats. These often include dairy products, in addition to seeds and grains. But let's look at this in detail now.
Seeds, nuts and seeds
- Pumpkin seeds
- Sunflower seeds
- Hazelnuts
- Flaxseed*
- Walnuts
- Almonds
- Chia seeds*
- Sesame
- (Crumbled) Flaxseed*
Dairy products with high protein content
- Cottage cheese or low fat curd
- Yogurt or vegan yogurt
- Cream cheese
Flour alternatives
- Almond flour* or ground almonds*
- Goldlein flour
- Sweet lupine flour
- Soy flour
- Coconut flour*
- Quinoa flour
Eggs provide even more protein in bread - they are also responsible for the ingredients sticking together and forming a uniform dough. For those who do not tolerate eggs, you can make an egg substitute from flaxseed.
Likewise provide Psyllium husks* for binding the bread. When mixed with water, they form a slimy mass that solidifies during baking.
Fats are also used. One part is found in nuts and the other is added to the dough via oils or dairy products. You should not do without them. Fat is a flavor carrier!
We replace conventional wheat, spelt or rye flour with nut flours or ground nuts - depending on the recipe. If you are not so familiar with it yet, check here: "This is the difference between ground almonds and almond flour„.
