What ingredients do I need for the kidney bean burger?

Before we get right to the recipe, let's take a look at the ingredient list. I'll tell you which ones you need and what you can substitute ingredients with that you don't have at home.

Kidney beans

Beans are the perfect choice for burger patties. They are:

1. healthy and nutritious: Kidney beans are rich in fiber, protein, vitamins and minerals. They are an excellent source of vegetable protein and provide your body with important nutrients.

2. sustainable and environmentally friendly: The production of plant-based foods like beans has a smaller environmental footprint compared to meat production. By enjoying kidney bean burgers, you are actively helping to protect the environment.

3. versatile and creative: Kidney beans are pretty tasteless. You can spice them up with a wide variety of flavors and spices. You have endless possibilities to adapt and vary the burger to your taste.

4. perfect texture: Kidney beans have a natural binding ability that allows them to be formed into a firm, juicy consistency. Your burger patties won't fall apart or be dry.

Kidney beans make muscles strong, are good for the figure, strengthen the nerves and provide lots of vegetable protein.

If you don't have kidney beans at home, you can use any other type of bean, such as white or black beans.

Oatmeal

Rolled oats are a fantastic ingredient for burger patties, and not just because they're so healthy.

1. binding and texture: Rolled oats can absorb and bind liquid. They ensure a firm consistency of the burger patties. Oat flakes prevent the patties from falling apart during frying. They also give the patties a pleasant texture with more bite.

2. nutrient richness: Oatmeal is an excellent source of important nutrients. They contain fiber, which aids digestion and increases the feeling of satiety. Oatmeal is also rich in vitamins (especially B vitamins) and minerals such as magnesium and iron.

3. health benefits: Oatmeal is particularly known for its positive effect on cholesterol levels. Oats contain beta-glucans, a type of soluble fiber that can help lower LDL cholesterol levels and thus reduce the risk of heart disease.

In addition, oatmeal keeps blood sugar levels stable and can prevent cravings.

If you don't have oatmeal, then you can use spelt flakes as an alternative, Soy flakes*use breadcrumbs, corn flour, potato starch, ground nuts, cooked rice or cooked quinoa.

Onion and garlic

So far, the brats still taste pretty neutral. Oatmeal and beans do not exactly provide a flavor explosion.

This is different when onion and garlic come into play. In order to have more frying aroma in the burger later on, they are added to the pan in small cubes and are fried hot.

If you don't have fresh garlic, then you can use garlic powder or just do without it altogether.

Spices

Now, with mustard, soy sauce, paprika powder, curry powder and parsley, a lot of flavor comes into play. Of course, you can add other spices or simply use more of them as the mood takes you.

Remember, though, that you'll also add plenty of flavor to the burger later with a tasty sauce.

Tip: Try smoked paprika powder - it makes a great addition to veggie burgers!

Roll

You can make the burger bun yourself or go to the bakery and get a whole wheat bun.

Whole grain has the advantage that it makes you full for a long time. In addition, the nutrient content in whole grain rolls is very high.

For white flour, only the endosperm is used. Vitamins, minerals and fiber are removed. That's why a roll made from white flour contains two-thirds fewer nutrients. So: If you want to eat healthy, steer clear of white flour.

If you have a little more time, you can make your own roll.

The beans patties fall apart? This is how you prevent!

There is nothing more annoying than the moment when you put the patties in the pan and want to turn them. And what happens then? The kidney bean burger patties just fall apart into pieces. To make sure that doesn't happen to you, I've collected a few tips here that will save you from that.

Wash the beans properly

Drain the beans well. Wash them only very briefly and quickly. Do not rinse them forever. Especially do not soak the beans in water.

Crush the beans with a fork. This way, more of their structure remains, which ensures that the mass does not fall apart. If you use a hand blender, the mixture will be too soft. It does not matter if a few pieces of beans are visible.

Giving time to the masses

You probably know this from muesli: If you add oatmeal to milk when it's very fresh, it's dry. But if you let them steep, they absorb the milk. That's exactly how it is with a savory recipe.

If you want to prevent the fritters from falling apart, then you should let the bean mixture rest. Allow half an hour for this in the refrigerator. This will make the mixture more malleable and compact. If you want to be absolutely sure that the kidney bean burgers will not crumble when you fry them, let the mixture rest overnight.

Fry the kidney beans patties

In order for the patties to keep their shape, you need enough oil. And that in a coated pan. Never put the patties in a cold pan, otherwise they will soak up the oil.

Heat the pan on high, then turn down the temperature and fry the patties now at low temperature in the hot pan. Since the patties are vegan, you don't have to worry about them being undercooked. The beans are cooked anyway. So it's more about the frying flavor.

The best kidney beans burger recipe

Are you ready and already hungry? Then you can start right away. If you've never made vegan patties from beans before, you can find detailed instructions here.

If you've made recipes like this before and are just looking for inspiration, you'll find a short version at the end of the post.

Here comes the long version with exact step-by-step instructions. The recipe is enough for 4 vegan burger patties from kidney beans.

Oh, by the way: Fine leaf oatmeal* and CornstarchYou can order * for this recipe from Amazon.

Ingredients:

  • 80 g tender oat flakes
  • 1 can kidney beans
  • 1 onion
  • 2 garlic cloves
  • 1 carrot
  • 1 tablespoon mustard
  • 2 TBSP. Cornstarch*
  • 1⁄2 tsp paprika powder
  • 1 tsp soy sauce
  • 1 tsp curry powder
  • 1-2 sprigs parsley

Also: powerful food processor*, knife, board, pan.

1. prepare the oatmeal

The first step is to chop the oatmeal. You can either do this with a sharp knife and chop them on a board, or grab a food processor. With the food processor, however, make sure that you don't turn the oatmeal into flour.

A few pieces may still be visible. Put the oatmeal in a bowl and set aside.

2. onion and garlic

Cut the onion and garlic into small pieces. If you do not want to bite pieces of garlic, squeeze the cloves through a garlic press.

Put a little olive oil in a frying pan. Fry the cubes until they become translucent. Remove the pan from the hot stove.

3. prepare the beans

If you don't want your kidney bean burger to fall apart during frying, you need to be gentle now. Pour the beans into a sieve, rinse them only very briefly. Puree them very briefly with a food processor.

There should still be pieces visible. Alternatively, you can simply mash the beans with a fork or use a potato masher.

Under no circumstances should you mash the beans until they are just a mush. This increases the likelihood that they will break down during frying.

Add the beans to the oatmeal.

4. grate the carrot

For color, I like to add a carrot to the batter.

Peel the carrot and grate it coarsely. I use a vegetable slicer for this. Don't grate it too finely, or it will get mushy.

If you don't have a carrot on hand, you can try zucchini. If you have neither at home, then you can skip this step. Your kidney bean burger will be delicious even without a carrot.

It is more for appearance than taste.

Add the carrot to the bowl with the beans and oatmeal.

5. the spices

Now come mustard, Cornstarch*, paprika powder, soy sauce and curry powder. The order doesn't matter.

Finally, chop the parsley. Knead them into the dough with your hands. Put the mixture aside for 5 minutes. The longer you leave it guessing, the better. I like to use this time to start cleaning up and washing up.

This way I can be sure that the mass will not disintegrate.

6. fry the kidney beans burger

Form patties and place them on a plate. Do not put them on top of each other.

If you want to put them in the burger, you can now cut the buns in half, cut the vegetables, prepare the sauces and wash the lettuce.

Add oil to the pan. When hot, turn down the heat and fry the patties on both sides. Remove the patties from the pan and place them in the prepared burger buns.

To make the roll nice and crispy, cut it in half and fry it in the pan with the cut side down. This takes no more than a minute!

The first layer in the kidney bean burger forms homemade ketchup. It is followed by lettuce, the patty, a slice of tomato, cucumber and slices of onion.

If you don't like ketchup, you can also mix sour cream with garlic and herbs. It also goes well with the bean fritters.

Now all you have to do is sit back and enjoy!

By the way: The patties can be easily frozen. So you can prepare a larger quantity and quickly have bean patties on hand at work.

It's best to freeze them uncooked. Don't forget to put a foil in between, otherwise they will freeze together to a huge patty. :)

What sauces go best with the bean burger?

What would a burger be without a tasty sauce? A good sauce enhances the flavor of the burger ingredients, but does not mask them. It can be spicy to hot. Whatever tastes good is allowed. But the fact is: a homemade sauce is a thousand times better than one from a tube.

Therefore, here are a few suggestions and ideas:

1. garlic yogurt sauce:

  • Greek yogurt
  • Garlic
  • Lemon juice
  • Fresh dill
  • Salt and pepper

2. avocado lime sauce:

  • Avocado
  • Lime juice
  • Coriander (fresh or dried)
  • Garlic
  • Salt and pepper

3. barbecue sauce:

  • Ketchup
  • Brown sugar
  • Apple cider vinegar
  • Mustard
  • Worcestershire sauce

4. mustard-dill sauce:

  • Mustard
  • Fresh dill
  • Honey
  • White wine vinegar
  • Olive oil

5. chipotle mayonnaise:

  • Mayonnaise
  • Chipotle chilies
  • Lime juice
  • Cumin
  • Smoked paprika powder

These sauces offer a wide range of flavors and textures, from creamy to spicy, and can enhance your veggie burger in a variety of ways. Choose the right sauce depending on your preferences and the flavor you want.
