Small pancakes are simply part of a really delicious breakfast. Especially on the weekend you can treat yourself to healthy pancakes. These are our favorite pancakes with yogurt and whole wheat flour.

Just the thought of fresh pancakes makes my mouth water. Not to mention the smell.

Mmmmhh how they smell. And how the berry sauce slowly runs along the stack of pancakes to drip onto the plate at the end.

Do you also have the picture in front of your eyes? The stomach can't help but growl.

Put the boring rolls, sausage and cheese aside. Today comes with healthy pancakes with yogurt much variety on the table. They are very fluffy and juicy.

And what's especially convenient: You don't even have to unpack your blender. You can mix the ingredients with a whisk. Perfect for all those who are not exactly morning people and like to do without noise after getting up.

Of course, I count myself among them.

On top of that, the pancakes can clearly be counted among the healthy breakfast recipes. This is ensured by yogurt and whole wheat flour. But more about that in a moment.

What ingredients make these pancakes healthy

Before we get right into it, I'd like to write down a few words about the ingredients. You should know what you eat and why the pancakes with yogurt are healthy.

Classic pancakes consist mostly of sugar and white flour. So really anything but nutritious and healthy. But these two ingredients can be easily replaced with healthier alternatives.

Whole spelt flour in the pancakes

White flour is unhealthy. Every child knows that by now. The flour lacks any nutrients and all healthy ingredients are filtered out. It's a shame, really, because such a wholemeal flour doesn't taste much different.

Instead of whole wheat flour I bake healthy pancakes with Whole spelt flour. Spelt flour is supposed to be much healthier than classic wheat flour. It contains more nutrients and saturates longer. Cravings are absent, which means that we do not consume so many calories.

The whole grain makes the pancakes darker than the classic pancakes you know. But in terms of taste, this does not change anything.

No sugar in healthy pancakes

If you're watching your line, you'll steer clear of too much sugar. You don't have to give it up completely, but the less of it you eat and drink, the better.

Sugar contains tons of calories and no nutrients. Once you start using less in recipes, you quickly realize how mega sweet everything tastes.

In this recipe I leave out sugar completely. The sweetness gets the pancakes with yogurt through the topping. However, I also understand if that is too little sweet for you.

You can work with Erythritol* or Birch sugar* help. They have far fewer calories and still provide a pleasant sweetness.

Instead of resorting to sugar, I use fresh fruit for the yogurt pancakes. This gives them a natural and healthy sweetness.

Yogurt and milk

Natural yogurt is the secret weapon behind this recipe. It ensures that the pancakes become super moist. I have experimented a lot and after the fifth attempt finally found the optimal amount.

The yogurt makes them incredibly moist and fluffy. A dream :)

If you like, you can also use a vegetable yogurt. Tip: Almond yogurt has a slightly sweet taste and is particularly suitable.

Milk and yogurt are two ingredients in the pancakes that provide calcium. This strengthens the bones and teeth. And on top of that it tastes simply delicious - that must suffice as an argument :)

Eggs for healthy pancakes with yogurt

Hey, good news: While many recipes require you to separate the eggs and whisk them separately, that's not the case here. Just a simple whisk is all you need to stir the recipe together.

This saves a lot of time and work. That is why I love this recipe so much.
As you can see, by changing a few ingredients, you too can easily bake healthy pancakes. And believe me, they taste much better than the unhealthy white flour version.

Are you ready to get started? Bowl, plate and pan already waiting to be filled? Then let's get started right away. If you've never made pancakes with yogurt before, you'll find detailed instructions here. If you already consider yourself a pancake pro, then you'll find a quick version at the end of the post.

Well, then: Let's bake healthy pancakes. Without sugar, without white flour. But with a big portion of love and taste!

Here comes the long version with very precise step-by-step instructions. This recipe is enough for 8 pancakes, so two people.

Ingredients

Also: a whisk, a bowl and a pan.

1. mix the wet ingredients

First, add the milk to the bowl. Break the first egg into the bowl and whisk it. Then add the second and finally the third. Stir until everything is well combined.

Now add the yogurt. Add it to the mixture by the spoonful.

2. the dry ingredients

In a second bowl, weigh flour and Baking powder* off. Sometimes it may be that Baking powder* and flour form small lumps. You can prevent this by passing through a sieve.

I sift flour and Baking powder* always, because this also prevents lumps in the pancakes.

3. mix the ingredients

Now, using a whisk, stir together the flour-Baking powder*-Add the mixture to the first bowl. Instead of adding everything at once, proceed slowly here too.

I usually take one to two tablespoons of flour, stir until smooth, then add another couple of tablespoons. Repeat the process until everything is mixed.

At the very end comes the Cinnamon* for this. You can add anything from a small pinch to a teaspoon. Cinnamon* ensures that the pancakes are very tasty because it tricks our taste buds into thinking they are sweet.

4. bake healthy pancakes

Now it's off to the pan. It is best to use a small soup ladle for this.

First you bring the Coconut oil* to melt. And then the first pancake can go into the pan. I always prepare them individually because the batter tends to run when baking. If you put more than one pancake in the pan, they may stick together and be difficult to turn.

Fry the dough on both sides over medium heat. Done!

Why healthy pancakes harmonize so well with berry puree

It's pretty boring without a topping. But mostly it's chocolate sauce, caramel and the like that turn even the healthiest pancakes into mega unhealthy calorie bombs.

But this does not have to be. Fortunately, there are very tasty and healthy berries that taste at least as good. And on top of that bring a load of vitamins.

Tip: If you don't have time or don't want to make berry puree, you can also use jam. Make sure, however, that you use a sugar-free jam. There are now many jams with Birch sugar*, which not only contain fewer calories, but are also less harmful to the teeth.

But there are also fruit spreads that are sweetened with apple puree. Tastes mega delicious! Or you reach for a homemade applesauce. The possibilities are almost endless.

Grab a colorful mix of berries of all kinds. In the berry puree in the photos there are raspberries, blackberries, blueberries. You can use fresh or frozen berries.

  • Put the berries in a pot and turn on the stove top.
  • Stir the berries constantly so they don't burn.
  • Heat and stir the berries until you get a nice berry puree.
  • You can add a little water. But please not much, the berries themselves lose water when heated, usually even enough.

If you like, you can stir in a little yogurt. But we prefer to add the hot berry puree to the cold yogurt. Yummy! :)

If you avoid sugar and other sugar substitutes, you'll have healthy pancakes. If you can't do without sugar altogether, it's best to use a little honey instead or Agave syrup*.
