Christmas without gingerbread? That's like summer without sun. It just doesn't work at all! But if you're trying to cut down on carbohydrates, it's a little difficult with gingerbread.

Low carb gingerbread ingredients

I love the smell of gingerbread. Cinnamon*, aniseed, cloves, Cardamom* and nuts are an unbeatable combination - the smell fills the whole house and when you close your eyes you immediately feel transported back to your childhood. At least that's how it is for me :)

Gingerbread recipe without egg

The great smell gets gingerbread from the spice mixture. You can either make it yourself or just buy it ready-made. If I decide on the purchased variant, I take a jar. So you can keep the spice and store best dry.

Although I'm usually a big advocate of making it myself, this time I simply lacked the time. But even the ready-made mixtures taste wonderful.

Exchange flour for nuts

In conventional gingerbread recipes, rye flour is used. After all, this is already much healthier than normal white flour. However, rye flour also contains a lot of carbohydrates. To be exact, there are 71 grams of carbs per 100 grams of rye flour.

So we just swap it out. Instead of rye flour we take for our low carb gingerbread ground hazelnuts*. They have a wonderfully nutty flavor and provide healthy fats and minerals. The hazelnuts are mixed with ground almonds. And you have the perfect flour substitute.

Gingerbread without sugar

We also do without sugar in the dough, the chocolate and the filling. Our low carb gingerbread is made with Birch sugar* sweetened. The filling consists of candied orange peel (in Austria: Aranzini) without sugar.

The filling is mixed with nuts and with apricot jam. For this I take jam with Birch sugar* instead of household sugar.

And for the chocolate I use sugar free dark chocolate*. I melt it in a bain-marie and then coat each gingerbread with it. This way, the gingerbread dominoes don't taste so sweet on the outside, but the full flavor unfolds when you bite into them.

Exchange eggs for oranges

A friend of mine is not allowed to eat eggs. Because she loves cookies but still, I bake at least 2 varieties without chicken eggs. Then you also get really creative. For gingerbread without eggs, I simply use orange juice as the liquid. This brings fruity flavor into the recipe at the same time.

And my girlfriend, she's happy :)

Low carb gingerbread without eggs

A quick recipe for low carb gingerbread. This gingerbread recipe comes without flour and without eggs.

Ingredients
 

  • 1 Orange
  • 80 g Butter
  • 250 g Almond flour
  • 50 g Xylitol
  • 2 EL Gingerbread spice
  • 30 g chopped almonds
  • 30 g chopped hazelnuts
  • 1/2 TL Cocoa powder
  • 1/2 TL Baking powder

For the filling

  • 1 Pkg Candied orange peel (Aranzini)
  • 10 EL Apricot jam
  • 10 EL finely chopped hazelnuts

Anleitung

  • Grate the zest from the orange. Squeeze out the juice. Melt the butter together with the orange juice in a pot.
  • Mix the dry ingredients together in a bowl. Now stir in the butter-orange mix. Knead the ingredients with your hands to form a dough.
  • Form a ball and wrap the dough in cling film. Leave to rest in the refrigerator for at least 2 hours.
  • Preheat the oven to 170° and line a tray with baking paper.
  • Knead the dough very firmly after resting. Roll out the dough on a floured surface until it is about 2 cm thick. Cut the dough into two equal parts.
  • Prepare the filling. To do this, finely chop the candied orange peel. Then mix it with jam and nuts. Depending on the consistency, you can use more jam or nuts. The mass should be nice and spreadable.
  • Spread the filling on the bottom dough. Place the second dough on top and flatten the edge a bit with your fingers.
  • Put it in the oven. The dough needs about 20-25 minutes.
  • Let the dough cool and then cut it into cubes. Melt the chocolate in a water bath. Dip the small low carb gingerbread cubes into the chocolate and decorate them with grated nuts.

Making dominoes out of normal low carb gingerbread is a bit laborious. You can save the filling and the chocolate. Then you just roll out the dough thicker.
