Is your cauliflower not so handsome anymore and is it already starting to turn yellow on the florets? Then it's time to turn it into steaks. Simply cut off the not so nice pieces superficially with a knife.

To prepare a cauliflower steak, it is important that you still have the inner piece with stalk. Only through this the florets hold together. If you are very hungry, you can of course turn the entire cauliflower into steaks. To do this, simply place the cut "leftovers" on the baking tray.

Here now follows detailed step-by-step instructions that will make the recipe a success even for beginners.

Ingredients

  • 1 large cauliflower
  • 1/2 lemon
  • 5 tablespoons olive oil
  • 2 garlic cloves
  • 1/4 tsp chili powder
  • 1 tsp (smoked) paprika powder
  • Salt and pepper

Also: baking tray lined with baking paper or large baking dish, knife, board, brush.

Heat the oven to 200° convection or 180° top-bottom heat.

Remove the leaves from the cauliflower and cut off the dry end of the stalk. Now cut the vegetable in half in the middle of the stalk. This way you can prepare two cauliflower steaks.

Cut away any excess florets along the outside. You should now have two steaks in front of you that are about the same thickness.

Put them on the baking tray, which you have lined with baking paper. Now we will take care of the marinade.

Squeeze the lemon. Mix the juice with olive oil.

Peel the garlic cloves and press them through a garlic press. Add the garlic to the olive oil. Now add the chili powder and the smoked paprika. Mix the ingredients with the brush.

Brush the marinade onto the steaks. Make sure that they are also covered with it on the sides and that the cavities get some of it. If there is any marinade left over, pour it on the steaks.

  • Fresh thyme or rosemary
  • Seeds and nuts like sunflower, pumpkin, cashew
  • Soy sauce
  • Onions (be sure to fry them in the oven)

Can I reheat cauliflower steaks in the oven?

The steaks taste best when they are fresh from the oven. Because then the cauliflower is still a bit firm to the bite. If you warm them up, they become much softer - especially at the high temperatures in the oven.

The best way to heat them is in the microwave. Due to the high water content, they are hot very quickly. By the way, you can keep them in the refrigerator for 3 days if they are already baked. Raw and seasoned, you should prepare them within 12 hours and during the waiting time, coat them with plenty of oil.
