Fed up with tomato sauce and mushroom sauce? Then you should try it with peppers. This way your bell pepper sauce will be vegan and mega delicious!

When I go shopping hungry, I just always buy way too much. Fortunately, however, no sweet stuff, but mostly fruits and vegetables, because I imagine what I will prepare in the next few days.

And then, it does not work out in time. The bananas turn brown and the peppers become shriveled.

Not very appetizing, but fortunately there are many recipes with which you can use up such leftovers. Upcycling so to speak :)

When I see the three red peppers shrivel in front of me, it quickly becomes clear: A simple and quick recipe is needed. So I thought to myself: why not prepare a vegan bell pepper sauce from everything you have at home?

And lo and behold, this recipe was born.

It turned out so delicious, I'm dying to introduce it to you.

So if you've also over-shopped, or maybe even have a bountiful crop of peppers in the garden, this recipe comes in handy.

What ingredients you need for the vegan bell pepper sauce

The most important ingredient is of course the peppers themselves. Here you should grab red peppers or a mixture of yellow and red. Green peppers are not so good, they taste too bitter and also the color of the sauce suffers greatly.

With a mixture of red and yellow peppers you get a beautiful shade of red or orange. This will enhance the look of any dish. But more about that later.

Red peppers have a sweet taste and are perfect for the sauce. But not only do you benefit from the taste of the sauce, it also has a lot to offer in terms of health.

Bell peppers contain many valuable nutrients and only a few calories. You will find a lot of folate in them, which plays a very important role in cell division and growth. The mineral potassium is also found in the peppers. It is important for the balance of the acid-base balance and is involved when nerve impulses are passed on.

And a very important question: do you really have to peel the peppers? In many recipes you can find this elaborate step. I do without it. Whoever uses a powerful food processor*, you can save yourself the trouble. I don't think you notice any difference in taste.

Alternatively you can also use a BlenderUse the ingredients *. This works quite well because the ingredients are soft anyway.

Ingredients
 

  • 2 Red bell bell pepper
  • 1 Onion
  • 2 Bone garlic cloves
  • 1 EL Olive oil
  • ½ TL Paprika powder
  • ½ TL Chili salt
  • 3 EL Unsweetened vegetable milk I take oat milk
  • 1-2 Stems Parsley

Anleitung

  • Preheat the oven to 180° top-bottom heat.
  • Chop the bell bell pepper, onion and garlic. Place the pieces on a baking tray lined with baking paper.
  • Roast the vegetables in the oven for 15 minutes. The skin should already start to turn a little black - this provides a delicious roasted aroma.
  • Take the vegetables out of the oven and put them in the food processor. Now add olive oil, paprika powder, chili salt and vegetable milk.
  • Blend all ingredients together.
  • Cut the parsley and sprinkle it into the sauce. Done!

How you can refine the bell pepper sauce vegan

You are not quite convinced yet? That's no problem. Here are a few ingredients you can mix into the sauce. I like to experiment and every now and then add a new ingredient and leave out another. Don't be afraid.

With these ingredients the bell pepper sauce remains vegan

  • Yeast flakes
  • Herbs like rosemary, oregano, basil
  • Tomatoes
  • Tomato paste
  • Smoked paprika powder instead of conventional paprika powder
  • Cashews* or cashew butter
  • Coconut milk instead of oat milk

Actually, anything you like and can find in the pantry is allowed.

How to preserve the sauce

You can store the sauce in the refrigerator for 3-4 days without any problems. Beyond that, however, it becomes critical. So: What do I do if I have prepared too much bell pepper sauce?

Quite simple:

Either freeze or boil down.

For canning, you'll need clean jars with screw tops, a saucepan, a kitchen towel, and the bell pepper sauce.

  1. Pour the warm sauce into glasses.
  2. Place a cloth in the pot to keep the jars from breaking during cooking.
  3. Place the jars in the pot.
  4. Fill up with water until the jars are 3/4 full.
  5. Turn on the stove, put the lid on.
  6. The boiling time begins when the water boils.
  7. Cook the bell pepper sauce for 90 minutes at 100° water temperature.

After boiling down, take the jars out of the water and let them cool. Do not put them upside down. Label them "paprika sauce vegan" and store them in a dark place. They don't need to be stored in a cool place, that's the great thing about canning! I keep them in the kitchen cabinet where they are protected from the sun.

This way, the bell pepper sauce will last for two years. Whenever you feel like it, you can open a jar. Great trick, isn't it?
