Ingredients
 

  • 45 g Walnuts About 3 tablespoons
  • 45 g Hazelnuts
  • 450 g Spelt flour
  • 1 TL Baking powder
  • 1 TL Salt
  • 150 g Natural yogurt
  • 200 ml Mineral water

Anleitung

  • Line a baking tray with baking paper. Preheat the oven to 180° top-bottom heat.
  • Chop the nuts and set them aside.
  • Mix spelt flour, baking powder and salt in a bowl.
  • Now add yogurt and mineral water one after the other. Stir well. Works wonderfully with your hands or a mixer with kneading attachment.
  • At the very end, knead in the pumpkin seeds and nuts. Knead a few times with your hands so that everything mixes really well and you can better estimate the consistency of the dough. Is the dough very sticky? Add another tablespoon of flour!
  • Spread a little flour in your hands and form balls of dough. Place the dough balls on the baking tray.
  • Coat the buns with a water and sprinkle them with seeds of your choice. Press your topping lightly with your fingers.
  • Off with it in the oven. Tip: Use the lowest rack in the oven, so the seeds on the buns do not burn. After 20 minutes they are nicely risen and evenly brown. You've certainly never eaten such quick rolls, have you? :)

If you've made too much and can't eat it all, you can easily freeze the spelt rolls. When you're hungry, take them out of the freezer and let them defrost.

There is a trick to make quick rolls without yeast taste like freshly baked: Sprinkle them with a little water after thawing and put them in the hot oven for 3-5 minutes.

This makes them crispy again and they taste almost like freshly baked. However, it is important that they are no longer frozen. I just let them thaw slowly on a plate.

What spelt flour is best for quick rolls

As with wheat flour, a distinction is made between different spelt flours.

  • Type 812 is perfect for cakes, pizza and yeast dough. It is the substitute for wheat flour 405 and 550.
