What are the advantages of buckwheat bread without yeast?

There is really nothing better than a slice of homemade bread. It always tastes just perfect. Whether as a side dish to a soup or salad or with a freshly made spread.

I love baking bread. Be it Low carb buns with cream cheese, Potato bread with spelt flour or a gluten free coconut flour bread. Bread ends up on my table every day.

There can also be a bit of variety. There's never a dull moment when baking bread and, of course, when eating. You can combine so many delicious ingredients to your heart's content. This time I decided to make buckwheat bread without yeast - but with nuts and carrots instead.

This simple and quick recipe I would like to present to you today.

You do not need to knead it for a long time, nor let it rest. Since the buckwheat bread does not contain yeast, it goes directly after mixing the dough in the oven. Thus, it is ready to be eaten much faster than a bread with yeast.

What are the most important ingredients for yeast-free bread?

Flaxseed as a miracle cure

If you've baked gluten-free bread before, you know that many recipes contain ingredients that are difficult to buy. And if you can, they're often very expensive. It's different with this recipe.

Locust bean gum, xanthan gum, Psyllium husks* are examples of this. You don't need any of these for this recipe. The substitute for yeast is crushed Flaxseed*.

They act as binders and ensure that the buckwheat flour and the rest of the ingredients become a uniform dough. Flaxseed* ensure that the dough holds together even without gluten or eggs.

This bread is quite healthy. The reason for this are the Flaxseed* and the buckwheat flour. Flaxseed* have a very positive effect on the intestinal flora. They help with inflammation and their mucilage has a protective effect on the mucous membranes of the stomach and intestines.

Flaxseed* are a true superfood made in Germany. They contain the highest proportion of omega 3 fatty acids in the plant world. And they grow right on our doorstep. So forget about Chia* and co, it also works regionally. The same applies to buckwheat, by the way.

So the buckwheat bread without yeast turns out thoroughly sustainable.

Buckwheat is mega healthy

The small grains are packed with vitamins B1, B2 and E. They also contain potassium, iron, calcium and magnesium.

Conventional wheat can be warmly dressed. With about 3x as much lysine (a protein building material) as most cereals, buckwheat scores points with everyone who wants to eat healthy and consciously.

Admittedly, buckwheat flour is not always easy to get hold of. I like to buy it in larger quantities from Amazon or pick up buckwheat kernels from the health food store. You can turn the grains into flour yourself using a food processor, which gives the bread an even more intense flavor. Making your own flour is usually the cheaper alternative to ready-made flour.

The grains are processed into fine flour in a few seconds in a powerful food processor. Try it out, it's really quite simple and worth it.

Baking powder instead of yeast

Every bread needs a leavening agent. In most cases, it is sourdough or yeast or a combination of both. A good alternative is Baking powder*. It makes even heavy doughs light and fluffy.

However, you can't just replace the yeast in existing recipes with the yeast on a whim. Baking powder* swap. This is guaranteed not to work.

Here comes the longer version for those who have not baked a bread so often.

The bread is enough for a loaf pan 21 centimeters long.

Ingredients

  • 40 g ground flax seeds
  • 40 g carrot (approx. 1 medium carrot)
  • 400 g buckwheat flour
  • 2 tsp salt
  • 1 package Baking powder*
  • 250 ml tap water
  • 3 tablespoons olive oil
  • 20 g walnuts
  • 20 g sunflower seeds
  • 20 g hemp seeds or pumpkin seeds

Also: a loaf pan.

Make the flaxseed egg and yeast substitute

To prevent the bread from falling apart, we need something to hold it together. In many recipes, this would be an egg or yeast. Since our buckwheat bread is without yeast and without egg, we need a mixture of flaxseed and water.

The ground flax seeds absorb the water and behave like a glue.

Mix the flax seeds with twice the amount of tap water. You can measure this with a scale, a cup or a tablespoon.

Stir the mix and let it sit for at least 10 minutes. The flax seeds will completely absorb the water. However, this only works if they are ground. If you don't have ground flaxseeds at hand, you can grind them with a food processor.

During the resting time, peel the carrot and grate it with a kitchen grater. 40 grams correspond to about one medium carrot.

Mix the bread dough together

Grab a bowl. Mix the flour, salt and baking powder together. If the baking powder or flour clumps, sift it through.

Now come the liquids to the dough. First the water and then the olive oil. Mix the ingredients with a mixer with dough hook or with your hands. Less suitable are a whisk or a wooden spoon.

Add the flaxseed mixture.

Fold in the nuts

If you like, you can chop the walnuts with a knife or simply break them in your hands. Mix walnuts, sunflower seeds and hemp seeds in a bowl. Stir them into the dough.

  • and anything nuts or seeds you have on hand.

Finally, add the grated carrot. The dough for buckwheat bread without yeast is now ready. Don't be surprised if it looks soggy and is slightly runny. This is exactly what we want.

The loaf pan

Fill the dough into the loaf pan. I like to use a silicone mold. You don't have to line it with baking paper or grease it. The bread can be released from it quite wonderfully.

If you use a conventional mold, it is best to line it with baking paper. This will prevent you from being annoyed later because the bread does not come out of the mold.

After you have filled the dough into the loaf pan, sprinkle the bread with seeds. I use sunflower seeds for this. Also good are sesame or flax seeds.

Bake the buckwheat bread without yeast

When the oven reaches the temperature, the bread goes in. At 200° top-bottom heat it needs about 50 minutes. However, this varies a bit from oven to oven. My oven bakes very one-sided, so I have to turn it the mold after half the time.

Keep an eye on the bread, if it starts to get dark, then cover it with baking paper.

Even if the buckwheat bread does not contain yeast, it still rises. This is due to the baking powder. The bread rises a good 3-5 cm higher than before baking.

You can tell whether the bread is done by testing it with a skewer. To do this, insert a wooden skewer into the bread. I use a vegetable skewer for this, but a toothpick will also do. If the dough sticks to the stick, the buckwheat bread is not ready yet.

You can also see if the bread is ready by tapping it. To do this, tap the top of the bread with your index finger. Does it sound hollow? Very good, then it is ready.

You can add a bit of bread seasoning if you like. But I find that the dough is already spicy enough due to the nutty flavor of the buckwheat flour. But since the dough is vegan anyway, you can simply taste it in its raw state and then still decide.
