Mix the flax seeds with twice the amount of water and set aside. Let the mixture rest for about 10 minutes.
Peel the carrot and grate it into small pieces.
Mix buckwheat flour, salt and baking powder in a bowl. Add the tap water, oil and grated carrots. Mix the ingredients with mixer with dough hook or knead with hands until smooth. Add the flax seeds.
Chop the walnuts into small pieces. Mix them with sunflower seeds and hemp seeds. Fold the mixture into the dough. The dough is rather liquid and must therefore in a loaf pan.
Put the dough into the greased mold. Sprinkle a few seeds, nuts or kernels on the dough. The bread now needs about 50 minutes.
Do the stick test to see if the bread is ready. When it is ready, let it cool before cutting it.
This recipe is the best example that a buckwheat bread without yeast can succeed and taste even better than the classic.
