What ingredients do I need for the spelt potato bread without yeast?

Before we get right to the recipe, I'll tell you the specifics of the recipe. Let's take a look at the ingredients. I'll give you a few tips on what to look for in ingredients and how to substitute them if you don't have them on hand.

Spelt flour

Spelt is for many the better alternative to wheat flour. As with classic white flour, there is light and dark spelt flour. The darker variant, by the way, is whole grain.

For this bread I use light flour because it is finer. If you want, you can also replace a 1/3 with whole wheat flour.

Spelt is considered healthier because it is rich in iron and magnesium. With spelt products, satiety is said to set in faster and last longer. In addition, it is easy to digest and is also tolerated by people who have problems with a sensitive stomach.

Potatoes

If you look at the recipe, you'll notice that you need floury potatoes. You don't have any on hand and want to use waxy ones? That's not a good idea.

Because with very great certainty, this will not make the bread fluffy and light, but fluffy and even fall apart.

So if you don't have any floury potatoes on hand, it's off to the store.

Bread spice

If you have to go shopping anyway, look around for a good bread seasoning as well. Since I bake a lot, I only realize what big differences there are.

I take at dear fine ground bread spice*because the flavor is more evenly distributed. Overall, there are many different flavors, my favorite is the farmer's bread mix.

Olive oil

Oil is added to bread dough because it improves the adhesive properties of the flour. In addition, the bread becomes softer and the crumb is not too hard.

You can also use another oil if you don't have olive oil on hand. If you don't want to use oil at all, use a little of the water you cooked the potatoes in instead.

Baking powder

Because the potato bread is without yeast, we need a substitute that will ensure that the dough rises. The best alternative is Baking powder*. As with a cake, the volume of the dough increases and the bread does not collapse after baking.

Sesame

I like to sprinkle sesame seeds on my homemade breads. The slightly nutty flavor goes great with bread doughs of all kinds. You can either omit it or replace it. Especially good are:

This adds extra fiber to the recipe and aids digestion. Plus, it just looks totally beautiful.

And then we need a little salt and the recipe is ready.

What is the shelf life of the bread?

Freshly baked, the bread lasts about three days. Make sure that it is really cooked through in the middle.

If it is still doughy and thus too moist, it may begin to mold.

If you don't manage to finish the bread in the three days, you can freeze it.

Cut it into slices and put it in a tupperware box. Put the lid on and you'll always have bread on hand when you need it.

If you like, you can simply make several rolls instead of one large potato bread without yeast. If you omit the bread spice, the rolls also go well with sweet spreads such as jam or hazelnut spread.

How can I refine the yeast-free potato bread?

You're not quite convinced of the recipe yet? No problem. You can easily adapt it. Here are a few inspirations.

  • Instead of spelt flour, you can also just use buckwheat flour.
  • You can mix spelt flour with a nut flour. Take for this 3/4 spelt flour and 1/4 nut flour like Coconut flour* or Almond flour*.
  • If you like, you can fold in a few fried onions.
  • Hazelnuts and walnuts also make an excellent addition to this recipe. Reduce the amount of flour accordingly.
  • On the surface you can sprinkle pumpkin seeds, sunflower seeds or sesame seeds.
  • If you like, you can grate a carrot and fold it in. This also works with zucchini.
  • Anyone who likes it spicy, add a little curry powder to the batter.
  • Dried rosemary or oregano also do well in yeast-free potato bread.

Well, was there something for you? :)

And here, as promised, the short version of the recipe with nutritional information. Depending on the thickness of the bread slices you can cut up to 20 pieces.

Ingredients

  • 440 g Floury potatoes
  • 1 ½ EL Olive oil
  • 500 g Light spelt flour
  • 2 ½ TL Salt
  • 2 TL Bread spice
  • 12 g Baking powder
  • 120 ml Water

Equipment

  • 1 saucepan
  • 1 food processor or potato masher
  • 1 bowl
  • 1 baking tray with baking paper

Anleitung

  • Peel the potatoes and boil them. Attention: Do not pour away the water! Catch 150 ml of cooking water and put it aside.
    440 g floury potatoes
  • Mash the potatoes or shred them in a food processor. Let them cool to room temperature. Add the olive oil.
    1 ½ tablespoons olive oil
  • Now add the remaining ingredients step by step. In my experience, the ingredients for the bread are best kneaded with your hands. But be careful: the potatoes are hot!
    500 g light spelt flour, 2 ½ tsp. salt, 2 tsp bread spice, 12 g baking powder
  • Do not forget to add the cooking water. If you have accidentally poured it away, use tap water instead.
    120 ml water
  • Heat the oven to 180°. Place a bowl of water in the oven so that the bread does not dry out too much.
  • You can either put the bread into a cake pan or form it into a ball and place it on the baking paper. If you decide to use a cake pan, you should line it with baking paper.
  • Slice the surface of the bread very lightly with a knife. Your potato bread without yeast needs about 40 minutes in the oven.
