It is delicious and crispy. Very crisp. Just incredibly crispy. And it gets even crispier with every bite. Wafer-thin and crispy it lies in front of me - I just can't help it - I have to take a bite!

Tarte flambée with arugula and salmon

Since I bought a bread baking stone for the oven, tarte flambée, pizza and co become even crispier. It is a dream. Not comparable with a tarte flambée from the tray.

But also prepared normally on the baking sheet, the dough of course tastes wonderful and becomes wonderfully crispy. But let's start from the beginning: With the ingredients you should have at home if you want to make this recipe.

Flammkuchen recipes are a dime a dozen. But this recipe is a little different. We cook namely for fitness conscious people.

So no white flour goes into the recipe, but wholemeal flour. This is known to keep you full longer and is healthier.

You can now buy tarte flambée dough at Aldi and the like. But it really doesn't have to be. Because you only need to mix an egg, flour, water, salt and olive oil.

It's awfully quick and tastes so much better than store-bought dough. I also haven't seen a whole wheat tarte flambée dough anywhere that you can buy.

So: Doing it yourself pays off!

Instead of baking the tomatoes, we put them fresh on the tarte flambée. This way, even the heat-sensitive vitamins such as vitamin C are preserved.

Besides, it tastes better when it's fresher :)

Tarte flambée with salmon and arugula

We spread the tarte flambée with crème fraîche before baking. And then when he came fresh and crispy from the oven, again made a sauce of sour cream and chives rauf.

Ingredients
 

For the dough

  • 220 g Wholemeal flour
  • 3 EL Olive oil
  • 1 Egg yolk
  • 1/2 TL Salt
  • 100 ml Warm water

For the topping

  • 2 EL Horseradish
  • 150 g Crème fraîche
  • 150 g Sour cream
  • 1/2 Confederation Chives
  • 10 Cocktail tomatoes
  • 1 Pkg Smoked salmon
  • 2 Handful Arugula

Anleitung

  • Mix flour, olive oil, egg yolk, salt and water in a bowl. Knead the ingredients with your hands to form a dough. If it is too sticky, add a little more flour.
  • Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes.
  • In the meantime, you can preheat the oven to 220°, sprinkle the work surface with flour and mix the horseradish with crème fraîche.
  • Roll out the dough very thinly with a rolling pin. Place it on a baking tray that you have covered with baking paper.
  • Coat the tarte flambée dough with the crème fraîche mix. Bake the dough for 10 to 15 minutes.
  • In the meantime you can mix sour cream, chives and salt. When the tarte flambée is ready, spread it with it. 
  • Then tomatoes, salmon and arugula are added to the dough. Sit back and enjoy the tarte flambée with salmon and arugula :)

With tarte flambée with salmon and arugula I always eat a big salad with lots of different vegetables and nuts.

Tip: The tarte flambée with salmon is also delicious cold. Take it out of the oven and put it aside. Do not top or spread with sour cream! The topping comes just before eating. The tarte flambée is then cold, but still mega crispy.

Flammkuchen are the best invention there is :) At least if I have my way. I love tarte flambée with salmon and arugula and fresh tomatoes. Since I made the dough myself for the first time, I will certainly make this quick recipe more often.
