What ingredients do I need for wholemeal tarte flambée?

Before we get straight to the recipe, I would like to say a few words about the ingredients. I'll also tell you what you can substitute certain ingredients with if you don't have them at home.

The Mix of sweet and salty makes this tarte flambée recipe so special. The sweetness gets the Wholemeal tarte flambée from the peaches and honey. And the salty counterpart is provided by the fresh goat cheese.

The rosemary provides a small taste explosion. By the way, you can use the dough for the tarte flambée made from spelt flour for all kinds of toppings. It tastes quite neutral. So you can make it spicy or sweet.

Whole spelt flour

That Spelt flour is healthier than white flour, almost everyone knows this by now. Spelt flour contains more high-quality protein, more vitamins and minerals. The high proportion of fiber also ensures that spelt flour is the better choice. In addition, spelt scores with a high proportion of unsaturated fatty acids.

When buying, make sure you don't use regular spelt flour, but whole spelt flour.

If you don't have whole spelt flour at hand, you can also use whole wheat flour. By the way, buckwheat flour is just as delicious, but it has a strong taste of its own that you have to love.

Olive oil and water

You don't need much more than a little extra olive oil and water to make whole wheat tarte flambée. If you run out of olive oil, you can use any other vegetable oil. However, olive oil is always used in the basic crispy tarte flambée recipe. It gives the dough a delicious touch.

The coating

Who prepares wholemeal tarte flambée, it can be sweet, salty, spicy or topped with vegetables. Very tasty tastes Tarte flambée also with feta and beet.

With me, however, it is clearly sweet this time. Not only because I got so many peaches, but because I like to eat sweet and healthy in the summer. So you need really ripe peaches and honey for this recipe. The counterparts are salty fresh goat cheese, walnuts and rosemary.

All in all, this makes for a really delicious flavor and a delightful mix of sweet and salty. On the crispy tarte flambée this mixture does really well.

What should I look out for in tarte flambée?

If you want the recipe to be really delicious, you need to keep a few principles in mind.

The dough

To make the dough crispy, you need to roll it out very thinly. The optimum is 3 millimeters. Dust the dough with flour so that it does not stick to the rolling pin.

It is best to roll it out directly on the baking paper, which you secure at the corners with something heavy or adhesive tape. Otherwise, the dough tends to tear when you lift it.

Baking

Preheat the oven so that the dough becomes crispy. It tastes best straight from the oven. Then the tarte flambée is warm and crispy. An unbeatable combination!

Use upper-lower heat so that the dough gets the same heat from all sides. Hot air is not so good in this case, because it makes the peaches too dark.

Ingredients wholemeal tarte flambée

  • 250 g whole spelt flour
  • 130 ml water
  • 2 tablespoons virgin olive oil
  • 1 pinch salt

Ingredients topping

  • 100 g fresh goat cheese
  • 1 tablespoon honey
  • 3 tablespoons olive oil
  • 1 sprig rosemary
  • 1 handful walnuts
  • 2 peaches

Also: bowl, rolling pin, knife, board, baking paper, baking sheet

Preparation tarte flambée dough

Preheat the oven to 220° top-bottom heat.

Knead whole spelt flour, water, olive oil and salt in a bowl to form a dough. This works equally well with a mixer with dough hook or your hands. The dough should be easy to form into a ball and not too sticky. Sometimes it may be necessary to use a little more flour.

Place the baking paper on the work surface. Flatten the tarte flambée with your hands first. Sprinkle the rolling pin with a little flour and roll out the dough. If it sticks, keep adding a little flour to the dough.

Roll until it is only a few millimeters thick.

Place the baking paper with the dough on the baking sheet.

Cover tarte flambée

Spread the dough with the goat cream cheese. To do this, simply use a tablespoon. Put the dough in the oven for 7 minutes.

Now you take care of the rest of the ingredients.

Pluck the needles from the rosemary and chop them. Mix them with olive oil and honey. Put the mix aside.

Wash the peaches and cut them in half. Remove the stone and cut them into thin slices.

Spread the peaches on the dough. Sprinkle with walnuts and drizzle the tarte flambée with olive oil, honey and rosemary.

Bake the tarte flambée for another 10 minutes.

The wholemeal tarte flambée is ready when the dough darkens slightly at the edges.
