For the recipe that I want to present you today, in addition to the tuber, we also need feta and spinach.

And an oven.

The only "problem" with this recipe is that the sweet potatoes need to be baked in the oven for a while. This is quite energy intensive.

But there is a solution for this, too: use the heat of the oven.

If you don't want to heat up the oven just for the sweet potatoes, prepare other recipes. This way you make good use of the heat of the oven. Fish in aluminum foil, homemade Spelt yogurt bread or a Veggie meatloaf offer themselves. But you could also vegan stuffed peppers prepare.

If you have enough space in the oven, you can even bake two dishes at the same time - fish fillet, for example, goes ideally with potatoes. Set two timers for this.

Today I want to show you how to prepare stuffed sweet potato with feta and spinach.

How can I shorten the baking time of the sweet potato?

You might be wondering if you should precook the sweet potato so it doesn't take so long in the oven? The problem with sweet potatoes is that they soak up a lot of water. This makes the potato very mushy and watery. I would advise against this.

However, you can reduce the baking time of the tuber if you choose a small or thin sweet potato. With the stick test you know whether the potato is already soft.

You can cut large potatoes in half lengthwise and put them in the oven that way. If that still takes too long, hollow out the tuber before it goes into the oven. This is not so easy, but it works well with a sharp knife. But beware: there's a big risk of cutting yourself!

What ingredients do I need for a stuffed sweet potato?

Let's take a quick look at the ingredient list before we get to the recipe. I'll tell you what to look for and how to substitute ingredients you may not have on hand. You'll also learn what to look for in each ingredient.

Sweet potatoes

Today, it is the star of our meal. The orange tuber is full of healthy ingredients. You can improve your immune system with the large vitamin A content, the high potassium content ensures a healthy heart and stabilizes blood pressure.

The orange tubers are stress killers, relieve cramps and strengthen muscles. In addition, they are said to be very good for our digestion.

Batata makes the skin glow - it is even said to have an anti-aging effect. The orange tubers make the blood sugar level rise slowly, which prevents cravings.

Yet they come per 100 grams to just 86 calories, which is amazing for a root vegetable.

Sweet potatoes, by the way, come in more colors than just orange - from purple to white to orange, the tubers add variety to your plate.

Tip: If you eat the skin as well, you'll be doing yourself a special favor. Most of the nutrients are hidden in the skin.

Feta

Stuffed sweet potato with feta, it tastes like pure vacation. Feta should be on your menu more often. It contains almost no carbohydrates, but a lot of calcium, zinc, vitamins A, C, B2 and B12.

With just 16 calories per 100 grams, it is a true weight loss miracle. By the way, you can also eat spinach raw, cut it into small pieces and sprinkle it into the salad - this provides more variety in the salad bowl.

Don't like spinach or don't have any at home? Just replace it with arugula or basil pesto. If you are familiar with wild herbs, you can also use nettles or goutweed as a spinach substitute.

Garlic and onion

Who can resist the smell of roasted garlic pieces and onions? They must not and should not be missing in any case. I take one clove of garlic, if you are a big fan, you can double the amount.

So that the onion does not overtaste the recipe, I take mild spring onions with large bulbs. I save the greens and sprinkle them over the finished bulb at the end.

You can also use shallots or regular onions. If you like it mild, take red onions.

Paprika

It provides color to the dish. It does not contribute much to the taste. A practical feature of oven dishes is that you can use peppers that are no longer completely fresh.

You can also use fresh tomatoes, dried tomatoes, zucchini or mushrooms.

Spices

Since we already have relatively salty feta, garlic and onion in the recipe, that's usually enough. But you can add some spice with chili. I like to add a pinch of my homemade herb salt to the filling.

Since there is no meat in the recipe and you can eat feta raw, you can just taste and season with herbs as you like. I like very much to use fresh parsley or chives.

This recipe is enough for two people.

Ingredients

  • 2 sweet potatoes
  • 2 spring onions
  • 1 clove garlic
  • 4 handfuls fresh spinach
  • 1/4 paprika red and yellow
  • 100 g feta
  • 1 tablespoon parsley
  • 1/2 tsp herb salt

Also: fork, knife and board, aluminum foil, pan, baking dish or baking tray.

Heat oven

Before the sweet potato with filling goes into the oven, it is first baked itself soft. This can take a lot of time - 30-60 minutes, depending on the size.

Preheat the oven to 200° upper-lower heat. You can also use 180° hot air. You don't have to wait until the oven is hot, the potatoes can go in before.

Prepare potatoes

Wash the sweet potatoes very thoroughly, because the skin stays on and can be eaten. I take a sponge and rub them a little with the rough side.

In order to cook them faster, make about 1 cm deep cuts with a fork in the entire potato. On the side where you will stuff them later, make additional oblong cuts about 1 cm deep with a knife.

All this ensures that the baking time is reduced.

Wrap the potatoes individually in aluminum foil. You can also do without it - but the potatoes will be noticeably drier without foil. In the foil they become soft, juicy and the skin does not burn.

Either place the sweet potatoes on the baking sheet as is or place them in a baking dish.

Now it takes 30 to 60 minutes, depending on the size of the potato. And as mentioned before: You can also put a loaf of bread or fish in the oven during this time to take advantage of the heat.

Prepare the filling

Chop the spring onion into small pieces. Separate the green part from the onion - we will need it later to sprinkle over the finished baked onion and for the dip.

Peel the garlic and press it through a garlic press - you can also just chop it.

Wash the peppers and cut them into cubes.

Fry the onion with garlic in a little olive oil. Finally, add the peppers and spinach. Stir until the spinach collapses and then fry a little more to evaporate the water that may have formed.

Chop up the feta. You can crumble it with your fingers or cut it with a knife.

Add the feta to the spinach mix in the pan and pull it off the heat.

Stuff the sweet potato

To find out if the potato is already cooked, spear it with a fork. If it loosens easily, then it is ready to be stuffed.

When the time comes: Take the potatoes out of the oven. Attention: very hot!

Carefully open the aluminum foil. Hollow out the potato with a spoon and add the filling to the pan with the other ingredients.

Can you freeze stuffed sweet potatoes?

I would advise you not to do this. The sweet potato becomes very mushy, you can still eat it, but after reheating you really only have mush in front of you. Tastewise little changes, but for the eye it is no pleasure.

However, if you have prepared too much, you can put the potato in a box with a lid and take it to work the next day or eat it the next evening. The stuffed batata will keep in the refrigerator for three days.

Tip: If you want to eat the stuffed sweet potato at the office, you can cook it at home, put the ingredients for the filling in a tupperware box and heat the potato in the microwave after stuffing.
