Oven trout is guaranteed to succeed with this recipe

Are you ready? Then let's get started. Here you'll find the long instructions for preparing trout in the oven in aluminum foil. If you've prepared fish in aluminum foil before and are basically good with it, you can find a short version of the recipe at the end of the post.

Here comes the longer version with quite precise step-by-step instructions. The recipe is enough for two people.

Ingredients

  • 2 ready-to-cook trout with approx. 250 grams per fish
  • 2 garlic cloves
  • 1 chili pepper
  • 1 bunch dill
  • 4 tablespoons olive oil
  • 1 untreated lemon
  • 1 tsp coarse sea salt and 1 tsp pepper

You can also use chili salt instead of chili peppers, which simply reduces the amount of sea salt in the recipe. However, I recommend fresh chilies because they are much more intense.

Also: a baking dish, two pieces of aluminum foil.

1. prepare the foil

Before you are immediately full of abundance and fish, you should first prepare the foil.

Tear two pieces from the roll. The foil should be larger than the fish in any case, so that you can wrap it nicely.

Place the foil on the countertop.

2. prepare the fish

Take the fish out of the package.

Wash it thoroughly under cold water, both externally and internally.

Pat it dry with kitchen paper.

You don't have to cut into the skin of the fish. Just leave it as it is.

Put it on the foil and wrap it loosely.

3. prepare the filling

In the next step you need to prepare the filling for the trout in the oven in aluminum foil. Here you can vary with spices. If you are not completely happy with my recipe, you can find a little further down, more inspiration for fillings.

Chop garlic and chili peppers.

Always wear gloves when cutting chili and just don't touch your face.

If you don't like it too spicy, you can leave out the chilies or remove the seeds from the chili pepper, this is where most of the spiciness is hidden.

Cut the dill into small pieces.

Mix garlic, chili, dill and olive oil in a bowl.

4. fill the fish

Unfold the fish and fill it with the mixture. Apply a little olive oil on the skin of the fish.

Finally, salt and pepper the belly.

Cut the lemon into small pieces. Put half of it in the fish, the other half on the fish.

5. off to the oven

Now close the aluminum foil and close the packet until the fish is no longer visible.

Now put the trout in the oven at 200 degrees Celsius top/bottom heat.

During the baking time, the trout should remain in the aluminum foil nest.

The fish is ready after 25 minutes. If you want the trout to get a little color, you can open the foil slightly in the last 5 minutes and switch to top heat or convection.

It tastes best when you serve the trout fresh from the oven. Place it on the plates with the foil on and work your way slowly. Removing the foil beforehand will do little but stain the table, your shirt and maybe even the floor 🙂

FAQ: What you need to know about baking trout in the oven

Do you still have questions burning under your fingernails? I can understand it - when cooking, 100,000 more questions come up across the flower bed.😃

I've thought about (and looked up on forums) what questions I would ask myself. If you have any other questions, feel free to ask them in the comments.

How long does trout in aluminum foil need in the oven?

After just a few minutes, it starts to smell delicious coming out of the oven. But don't let that fool you. It does take time for the fish to cook. Around 20 to 25 minutes at 180 to 200°. The actual baking time depends mainly on how big and thick the fish is.

Small fish are cooked after 20 minutes, while large trout can take 30 minutes. If you are unsure, take the fish out of the oven, open the foil and carefully unfold it. You can tell whether the flesh is cooked by looking at the belly. If the fish is still glassy, then it needs a few more minutes.

Should I wrap trout in aluminum foil or baking paper?

Both aluminum foil and baking paper are heat-resistant. However, the advantage of aluminum foil is that it is easier to fold and holds its shape better than baking paper. However, once you have discovered a good folding method for the baking paper, nothing stands in the way of your project.

Do you put the herbs inside or outside the fish?

If you want to prepare oven fish, both are allowed. However, I always add fresh and dried herbs to the fish. This is because the flavor of the herbs mixes better with the juices that come out of the trout.

The "meat" also absorbs the scent of the herbs better - this is especially true of thyme and rosemary.

Is a casserole dish or a baking tray better?

I use an oven dish. If the foil tears - which is very unrealistic - the juices run into the dish and don't evaporate immediately. Baking trays are larger and ideal if you want to cook more than two fish in the oven. I recommend using a tray with a high edge. This makes it easier to lift the trout out of the oven.

Can other fish also be baked in the oven?

You don't fancy trout or any other fish in the fridge and are wondering whether it will work? Of course you can! Any fish can be prepared in the oven and aluminum foil or baking paper, provided it's not too big for the oven 😅

Bear in mind that the baking time is longer for larger fish!

And as promised, here are the quick instructions for the recipe for anyone who has already prepared a trout or two in foil.

Is aluminum foil harmful to trout?

When preparing a trout in aluminum foil in the oven, concerns often arise: Could aluminum foil be harmful to the fish? Some experts point out that when cooking acidic foods, such as those with lemon juice, minimal amounts of aluminum could leach into the food.

For occasional use, the Risk however low. However, if you want to be on the safe side, you can use baking paper as an alternative, which is just as effective for juicy fish.
