With what recipe succeeds the low carb curd casserole

Are you ready? Then let's get right into it. If you've never made a low carb casserole before, here's a detailed tutorial. If you've made sweet casseroles without carbs before and are just looking for inspiration, then you'll find a short version at the end of the post.

Here comes the longer version with quite precise step-by-step instructions. The recipe makes one casserole dish and is enough for 6 servings as a dessert. As a main course it is enough for 2 people.

Ingredients

  • 100 g cherries
  • 400 g low fat curd
  • 150 g cream cheese
  • 3 eggs
  • 50 g Erythritol*
  • 1 vanilla pod
  • 50 g sliced almonds

Also: knife, board, bowl, whisk, casserole dish.

1. prepare the cherries

Wash the cherries and remove the pits. To do this, simply cut them lengthwise with a knife and remove the pit. You can also squish them between your fingers, but that will be quite a mess, with cherry juice ending up everywhere.

So I take my time and do it with a knife and board.

Set the cherries aside when they are pitted.

2. mix the ingredients

Open the curd, pour off the water. Put it in a bowl.

Mix it with a spoon or whisk until smooth.

Now add the cream cheese. Stir it in again before adding the eggs.

Finally comes Erythritol* in addition.

Mix the ingredients all thoroughly until they form a continuous mass.

3. the vanilla bean

Cut the vanilla bean open lengthwise. Scrape out the vanilla pulp. It works best with a butter knife. Do not throw away the pod, you can still use it for pudding, cocoa or similar.

Stir the vanilla pulp into the curd.

Taste a little of the mass. Is it sweet enough for you? If not: Add a little more Erythritol* to this. But remember: the cherries also add sweetness to the recipe.

4. stir in the almonds

You can now stir in the almonds, or sprinkle those into the baking dish.

If you choose the latter, you'll need to brush the mold with a little neutral oil, like canola oil, so nothing sticks.

Sprinkle the cherries on top of the casserole. I leave a few behind to add fresh on top later. During baking, the cherries lose their color and become very colorless.

5. bake the low carb curd casserole

Turn on the stove to 180° top-bottom heat. Your sweet casserole will take about 30 minutes. If your oven bakes as unevenly as mine, it's worth checking on the quark casserole halfway through. I have to turn the pan half a turn after 15 minutes.

It could be that the casserole gets a little dark after a while. It is best to cover it with aluminum foil or baking paper. This will protect your low carb quark casserole from the extreme heat.

Before you take the protein casserole out of the oven, it's best to do the chopstick test. Take a skewer and poke it into the center of the casserole. If the dough sticks to the skewer, your low carb quark casserole needs a few minutes longer.
