With which ingredients your low carb cake with coconut flour is guaranteed to succeed
Here come some tips and info about the ingredients you should take a close look at.
Coconut flour in low carb cake
What is white flour in a normal cake, we replace quite simply with Coconut flour*.
Coconut flour* tastes exotic. There's a load of coconut flavor in every bite. With 8.9 grams of carbohydrates per 100 grams, it is ideal for low-carb cooking compared to wheat flour (76 grams per 100 grams).
Coconut flour binds a lot of liquid. That is why we need 5 eggs. On the one hand they provide the color of the cake and on the other hand they make it so moist.

You can not replace wheat flour 1:1 with coconut flour, but should mix it with other flours or nuts.
Because coconut has a strong flavor of its own, you need less sweetener than with other flours. So low carb cake with coconut flour brings its own sweetness.
Ground almonds
Not to be confused with Almond flour*! Ground almonds* are simply very finely ground almonds. If you want to make flour from them, they must be de-oiled.
But we do not need that this time. Because we resort to normal grated almonds, the cake becomes juicier due to the oil it contains.
In addition ground almonds* much cheaper than Almond flour*. Don't have any to hand? Alternatively, you can also use hazelnuts or walnuts.

Eggs and almond milk in low carb cake
As I said, coconut flour binds a lot of liquid. That is why we need 5 pieces of eggs on a cake. However, this is still not enough.
In addition, milk is added to the cake. You have the choice between vegetable drinks like almond milk or normal cow's milk.
I always reach for almond milk. Then the cake is also suitable for those who have a lactose intolerance.
Plus, the almond milk adds a little more flavor to the cake.

Erythritol for sweetness in low carb cake with coconut flour
Of course, the sweetness of coconut alone is not enough. You can't get around a little extra sweetener.
Because household sugar has nothing lost in the low carb kitchen and is also very unhealthy, we take Erythritol*.
The great advantage is that this sweetener has hardly any calories.
When you replace sugar with Erythritol*, you need to use a little more of it. For the same amount, it only has about 70% sweetening power compared to sugar.
Preheat the oven. Now it also goes directly!

Why you should cover your low carb cake with foil
Allow enough time. The cake needs a total of about an hour in the oven. Of this, however, it is only half the time without foil.
After about half an hour, cover the cake with baking paper. Otherwise it will get too dark. Don't let this mislead you. It is far from done on the inside, it really needs at least 50 minutes.
For covering you can use aluminum foil or baking paper. Just do not forget about it!
