We make a Halloumi Burger with delicious grilled vegetables and crunchy arugula in a wholemeal bun. Because who says it always has to be meat? This veggie burger with grilled vegetables and Greek grilled cheese will knock your socks off!

In between, the burger craving overcomes you. Without any warning at all. Then you're suddenly faced with the decision: Get a ready-made burger from the fast food store or make it yourself?

Definitely make it yourself! Because only then you know what ends up in your belly.

If you're like me and don't eat meat, you might like to reach for ready-made patties from the freezer. But that doesn't have to be the case. Because a veggie burger is very easy to make yourself.

Of course, that doesn't mean you should eat it every day now. But at least you need to Halloumi burger not have a guilty conscience with grilled vegetables.

What ingredients do I need for a halloumi burger?

Before we get right to the recipe, let's take a look at the ingredients. I'll tell you what goes into the burger and what you can substitute it with if you don't have it on hand.

Halloumi

What would be a halloumi burger without the main ingredient? :) The Greek grilled cheese not only tastes good, but also contains a lot of vitamin D. With 100 grams you take about 1.1 µg of the vitamin.

In cheese you will find a considerable people calcium, which is important for muscles, nerves and bones. Even if it squeaks on your teeth and some people don't like it, your teeth benefit from the high calcium content.

However, the fried cheese also contains not a little fat and can quickly bring a lot of calories.

For the extra portion of protein (22 grams per 100 grams of cheese), it should not be missing from the menu of nutrition-conscious people.

Lentil spread

But also the DIY protein spread can be shown. Because in 100 grams of red lentils are 25.5 grams of protein.

Red lentils* are so suitable because they are quick to cook. Because they are much pulpier, they can be quickly processed into a lentil spread that goes well in burgers.

You can mix the dip with many different ingredients. I am a big fan of curry powder. But chopped onions, salt and fresh herbs are just as good.

Grilled vegetables

If the pan (or grill) is already hot, then let's immediately prepare grilled vegetables in it. Very thinly sliced zucchini, onion, peppers and mushrooms are particularly suitable as grilled vegetables. I season with salt and sometimes with a little rosemary.

If you want, you can of course also put the vegetables fresh in the burger. Here I can recommend additional tomatoes and cucumbers.

Since every day we have 5 servings of fruit and Vegetables should take to us, I simply pack a large amount of it in the Halloumi burger.

This looks great, makes the dish much juicier and adds a lot of flavor to the bun.

Salad

For the spicy note we need that certain something - instead of iceberg lettuce or lettuce I therefore take arugula. It brings a slightly spicy note to the burger, which goes very well with the mild cheese.

If you're not a fan of arugula, try red radicchio or lamb's lettuce.

Roll

I'm not a fan of store-bought burger buns. They consist only of air, sugar and a lot of wheat. This ensures that you quickly feel hungry again and even get food cravings.

Recipe: Halloumi burger with grilled vegetables

This recipe is enough for two people and makes two burgers. Here you will find very precise step-by-step instructions with detailed explanations. It is intended for those who rarely cook or have not often prepared lentil dip and halloumi.

Ingredients:

  • 50 g red lentils*
  • 1 tsp curry powder
  • 1 pinch salt
  • 1 tablespoon chopped parsley
  • 1 handful arugula
  • 1/2 tomato
  • 1/2 zucchini
  • 1 onion
  • 1 red bell bell pepper
  • 200 g halloumi
  • 1 tsp chili oil
  • 2 wholemeal rolls

Also: cooking pot, knife and board, pan, hand blender and some oil for frying.

Preparation:

1. prepare lentil spread

The first thing we do is prepare the lentil dip. While we take care of the rest of the ingredients later, it can cool.

For this, take the red lentils and grow them thoroughly. Put them in a pot and pour off the cloudy water, add fresh water and repeat the process until the water is clear.

Now pour twice the amount of water. In this case it is 100 ml of water. The easiest way to do this is to put the lentils in a cup at the very beginning and note how full the cup was. Now take twice as much water as lentils and you have the perfect amount.

Put the lid on the pot and turn the temperature up to the highest setting. Once the water boils, turn down to the lowest temperature and let the lentils swell slowly.

The lentils now absorb the water and then have the perfect consistency.

Once the lentils have absorbed the water, stir in the curry powder and salt. Puree them with a hand blender to a pulp.

Chop the parsley and put it aside, we stir it into the dip later. Parsley loses a lot of flavor if it is heated too much.

2. prepare grilled vegetables

Wash the arugula, tomato, zucchini and bell bell pepper thoroughly.

Set the lettuce and tomato aside.

Cut the zucchini, onion and bell bell pepper into very thin slices. The sharper the knife, the better you will succeed. The zucchini in particular should be wafer-thin so that we can fold up the burger easily later. The thicker the vegetables, the more awkward it is to eat.

I like to use mild vegetable onion for burgers because it doesn't overpower all the other ingredients. Feel free to use shallots, red onion, or regular onions. Again, cut thinly. And first, of course, peel and remove the first layer of the onion.

Put a little oil in a pan. I like to use canola oil for this because it is neutral in taste.

Fry the vegetables on both sides until hot. Season with a little salt.

Once the vegetables are done, transfer them to a plate and set aside.

Now cut the tomato into thin slices and chop the lettuce very coarsely so that it fits into the burger.

3. grill cheese fry

Take the cheese out of the package. Sometimes halloumi is already thinly sliced, most of the time you have to do it yourself. Use a sharp knife for this, otherwise it may crumble.

Ideal are slices with a thickness of about 0.5 cm.

By the way, you don't have to wash the cheese - in fact, I don't recommend it, because you'll dilute the flavor.

Grab the skillet, add a small drizzle of chili oil to the pan, and sear the halloumi over medium heat on both sides until it is clearly colored.

4. halloumi burger assemble

Cut the buns and place them very briefly with the cut surface down in the pan. They now become really fine crispy and the burger thereby even better.

Now mix the freshly chopped parsley into the curry dip.

Spread the lentil spread on the bun. Put the lettuce in the buns.

Now comes the halloumi in the burger and as a conclusion the grilled vegetables.
