A delicious recipe for vanilla ice cream that succeeds in no time. Without egg and without sugar.

Ingredients
 

  • 300 ml Milk
  • 100 g Erythritol
  • 1 Vanilla bean
  • 450 g Cream

Anleitung

  • Take about 1/3 of the milk. Scrape out the vanilla bean and mix the milk, vanilla and erythritol. It is important that the sugar crystals dissolve completely. If this does not happen: Heat the milk. 
  • Now mix the milk with the remaining milk. Why so much effort? If you heat all the milk, you have to let it cool down first. This takes quite a long time. If you heat only a small part of the milk and then mix it with the cold milk, it's faster :)
  • Whip the cream with a mixer until stiff.
  • Slowly fold the cream into the cold vanilla milk.
  • Pour the mixture into the ice cream maker and freeze for about 40 minutes.

How to make ice cream without ice cream maker

Then you can also freeze the ice cream like this. Put it in a tupperware box with a lid and put it in the freezer.

It is then not so creamy. But it tastes delicious anyway! :)

Vanilla bean or extract for ice cream

Opinions differ on this point. But I much prefer to use fresh vanilla pulp from the pod. It tastes much more intense. However, it has the disadvantage that it is more expensive. But I'm worth it :)

If you like, you can also mix vanilla bean and extract. But you have to know that vanilla extract does not contain real vanilla. You will not get the beautiful black dots.

If you do prefer to work without pods, you can also use vanilla extract.

Erythritol in ice cream instead of sugar

Instead of table sugar you will find in our recipe Erythritol*. This is a sugar substitute that contains hardly any calories. If you sweeten juices or cakes with it, you will notice a cooling aftertaste.

When you Erythritol* instead of sugar, then you need to use a little more of it. The sweetening power is around 60% compared to household sugar.

I usually take but less, because for my taste most recipes are much too sweet. This was also the case when I was looking for a normal vanilla ice cream without egg and replaced the sugar.

Whole milk, cream, yogurt or creme fraiche? There are many ways to turn a pod of vanilla into ice cream.

For us, however, one thing is certain: cream belongs in a creamy ice cream. Of course, that adds a whole bunch of calories to the ice cream. But if times sin, then right or? :)

The cream gets the calories because of its high fat content. But at the same time it gives the ice cream its taste.

If you prepare vanilla ice cream without eggs, you need something that can be whipped up fluffily. And in our case, that's the cream.

If you do not tolerate lactose, you can of course use lactose-free products. This has the advantage that you have even less Erythritol* you need. Lactose-free milk and cream have an inherently sweet taste.

Why it pays to make your own ice cream

Once you've had a vanilla ice cream with real vanilla, you won't like the supermarket kind at all. Ice cream from the supermarket is enormously sweet and pumped full of sugar.
