A cake that is ready in less than 5 minutes? OMG, give it to me! That's what I thought when I first heard about cup cakes. Just perfect when there is no time to bake and the Craving for sweets simply does not want to leave.

That's why we fired up our microwave once again. After our two delicious Protein Mug Cakes, there's today a vegan cup cake.

In the protein cake we packed yogurt and eggs, of course, it does not pass as a cup cake vegan.

Plant-based recipes are healthy, varied and delicious. That's why today we show you how to make a Cup cake vegan can prepare.

Perfect for those on a plant-based diet, who can't eat eggs or have a lactose intolerance.

And for those who are just starting to bake. Because this brownie from the microwave succeeds even the worst bakers.

Cup cake what is it?

The best invention in the world! :) Unlike a normal cake, this one is prepared in the microwave. That is why it is also called microwave cake.

Another name is cup cake or in English mug cake. This name has the small cake thanks to its method of preparation.

Namely, it is either stirred together directly in the cup or in a bowl and then poured into a coffee cup. Usually it is used butter, sugar, milk, flour and eggs.

Not with our Mug Cake. This mug cake is vegan.

These ingredients make your cupcake vegan

Today it must go very quickly. Because honestly: Before I stand long in the kitchen, I prefer to enjoy the time with my best friend on the balcony. :)

As chocoholics, the Cup cake vegan, juicy and with liquid chocolate core.

All you need for this is flour, a little sweetener, Cocoa powder*, oil, milk and chocolate. A microwave and a cup.

  • Swap white flour for spelt flour

    But of course no white flour. Because if we snack, then at least rudimentary healthy! We replace the flour in the Mug Cake with whole spelt flour. Tastes quite the same, keeps you full longer and contains many important nutrients that are missing in white flour.

  • Household sugar versus coconut blossom sugar

    And instead of household sugar we reach for Coconut blossom sugar*. This gives the cake from the microwave a caramel note. In addition Coconut blossom sugar* healthier because it has a lower glycemic index. For you, this means: no cravings because the blood sugar level remains constant.

  • Almond milk instead of regular milk

    Although the Cup cake vegan is, we need a little milk. We take Almond milk. It gives the Mug Cake a slightly nutty note.

And to make it nice and runny inside, we take dark Chocolate without sugar*. We ordered them from Amazon. And we're ready to go.

Cup cake vegan with liquid chocolate center

Baking a cake doesn't get any faster than this! This vegan cup cake needs only one minute in the microwave and tastes heavenly chocolaty.

Ingredients
 

  • 3 EL Spelt flour
  • 1 EL Birch sugar
  • 1 EL Cocoa powder
  • 1/4 Vanilla bean scraped out
  • 1 EL Oil (sunflower oil, rapeseed oil, coconut oil)
  • 2 EL Almond milk
  • 2 EL Chocolate drops

Anleitung

  • Mix together spelt flour, birch sugar, cocoa powder and vanilla.
  • Now add the liquid ingredients. Pour half of the batter into the cup. Now add the chocolate drops.
  • And then the second half of the dough. Put it in the microwave. 
  • Since your cupcake is vegan, it only takes about a minute at the highest power in the microwave.

The Mug Cake is ready when it steams in the microwave. The brownie should not cook for much longer than one minute. Otherwise it will become too dry. If this happens to you, you can simply enjoy the cake with your coffee. Then it's half as bad :)

Best enjoyed while still hot. If you like, you can garnish the cup cake with berries. Tastes also without simply mega delicious!

Chocolate cup cake vegan with liquid chocolate core

Unlike a normal microwave cake, this cup cake does not require an egg. Whether it is really cooked through or not is therefore not so important. You can eat it even if it is not baked all the way through. It even tastes much juicier that way.

Our conclusion

Cup cake vegan is pure madness. In less than 3 minutes, a finished cake is on the table. That should a normal cake times imitate :) For the quick desire after a hard day at work, as party food or for the girls' night out, this is the perfect snack!
