This quick recipe in a jar shows that a chickpea salad tastes mega vegan. It is the perfect lunch to go for the office.

We pack the salad in a jar. So you can easily prepare it the night before and take it to the office. All you need is a fork. You can fill up your body with vitamins.

With curry powder, the vegan chickpea salad is spiced oriental. Pumpkin seeds, kohlrabi and cucumber provide extra crunch.

Ingredients
 

  • 6 EL dried chickpeas
  • 1 TL Curry powder
  • 1/2 Cucumber
  • 5-6 Radish
  • 1 Tomato
  • 2 Spring onions
  • 2 EL Lemon juice
  • 2 EL chopped parsley
  • 1 Handful green salad
  • Raspberries and pumpkin seeds

Anleitung

  • Soak the dry chickpeas in water overnight. The next day, cook them with 1 teaspoon of curry powder for at least three quarters of an hour.
  • Wash and chop the vegetables. Add the parsley.
  • Prepare the dressing. For this, mix lemon, pepper and oil. Pour the dressing over the chickpeas.
  • Start layering the salad in the jar. The first layer is the chickpeas. Here you can add curry powder, if it tastes too little intense. On top comes the vegetable mix.
  • On top the green salad, pumpkin seeds and raspberries.
  • Before eating - close lid well and shake very vigorously. Or tip into a salad bowl. Done!

If you want to eat the chickpea salad immediately, you can mix the chickpeas, lettuce and vegetables and season with the dressing.

Separating the layers is only important if you want to eat it later. The oil and lemon would otherwise wilt the lettuce and vegetables.
