Why this kohlrabi salad is low carb? Well, if we are honest, we all eat too many carbohydrates.
This does not mean that you should completely eliminate carbs from your diet.

Kohlrabi salad low carb with apple
Ingredients
- 1 medium kohlrabi
- 1 small apple
- 6 Radish
- 1 Handful mixed nuts: Walnuts, hazelnuts
- 1/2 Confederation Herbs: onion greens, chives, cress, parsley
- 1 TL Flaxseed
- 3 EL Olive oil
- 1 EL Apple cider vinegar
- 1 TL Mustard
- Salt and pepper
Anleitung
- Peel the kohlrabi and grate it very finely. Squeeze the water out through a sieve. Cut the apple into small pieces - whether rasp or cube is quite the same.
- Chop the radishes, nuts and herbs.
- Mix olive oil, apple cider vinegar and mustard in a jar. Stir it together with a whisk until it becomes creamy. This may well take a few minutes.
- Put all the ingredients in a salad bowl. Mix them together and season with salt and pepper.

Kohlrabi

Apple
It gets fruity with apple pieces. You can choose from different apple varieties. From sweet to tart, everything is possible. In this recipe, you'll find a Golden Delicious apple. It balances out the slight spiciness of the kohlrabi.
If that's too sweet for you, you can use a tart Granny Smith apple.
But no matter what kind of apple you choose. In order for the kohlrabi salad to remain low carb, you must not take too much of it. If you're really strict about it, you should only use a very small amount.
How many calories does an apple actually have?
Radish
The eye eats with you and needs a little color. Red would be nice, wouldn't it? Radishes are wonderfully suitable for this. They consist of 95% water and therefore have only 15 calories per 100 grams.
If you are on a low carb diet, you should eat radishes regularly. And not only because they contain few carbohydrates. They also contain a lot of potassium, sodium, magnesium, phosphorus, vitamin C and B vitamins.

How to prepare kohlrabi salad
If you want to take the salad to work, that's no problem. You can pack it ready-made in a screw-in rhubarb and put it in your bag. Only the apple is a bit critical. It turns brown as soon as it is exposed to the air for too long.
There are two ways you can prevent this:
Either cut it fresh and sprinkle it over the kohlrabi salad just before eating.
Or you can sprinkle the freshly cut apple pieces with lemon. At the same time, however, this ensures that the salad becomes somewhat more acidic. So you need less vinegar.
Store the salad in the refrigerator so it will still taste crisp and fresh later.
