There are few cookies easier and faster to prepare than these cranberry cookies. In the oven they need only 10 minutes.

And on top of that, they are also quite healthy. Because we simply do without household sugar and white flour. We take oatmeal, wholemeal flour and Birch sugar*.

With these ingredients you can save calories. One cookie comes to just 70 calories and that even though they are huge.

If you want to sin a little, you can stir a little white chocolate into the dough. However, you must then reduce the amount of sugar.

But believe me: Even without chocolate, these cranberry cookies with oatmeal taste mega delicious.

As a mood for Christmas, they are particularly well suited.

But honestly, you can eat these cookies all year round.

They just always taste heavenly good. I eat them in between even in the summer.

By the way, a cup of herbal tea or cocoa goes perfectly with it.

Ingredients
 

  • 100 g fine rolled oats
  • 90 g Wholemeal flour
  • 10 g Baking powder
  • 1 TL Cinnamon
  • ¼ TL Salt
  • 1 TL Orange zest
  • 28 g melted coconut oil Alternative: butter
  • 1 Egg
  • ½ Vanilla bean scraped out
  • 12 g Birch sugar
  • 120 ml freshly squeezed orange juice
  • 70 g fresh cranberries, chopped Alternative: 50 g dried cranberries

Anleitung

  • Grind the oats in a food processor or chop them into small pieces. At the end, they should be only about half the size they were at the beginning.
  • Mix oatmeal, flour, baking powder, cinnamon and salt in a bowl.
  • Stir in the orange zest.
  • In a second bowl, mix the melted coconut oil, egg and vanilla. Mix the ingredients with a mixer. Now add the birch sugar and orange juice.
  • Now add the oatmeal mix. Stir until all ingredients are well mixed together. Finally, sprinkle the cranberries into the dough.
  • Chill the dough for 20 minutes. Cover it with a cloth or foil and let it rest in the refrigerator.
  • Preheat the oven to 160° top-bottom heat. Line a baking tray with baking paper.
  • Take one tablespoon of dough per cookie and place it on the baking sheet. You can also make them smaller, but then the baking time will be shorter!
  • Off on baking paper and then off with it in the oven. After 10 minutes your cookies are ready. Let them cool for about 10 minutes and you can enjoy them :)

What you need to know about these cranberry cookies

It is very important that you do not forget the orange zest. They give the cookies a really delicious aroma.

Buy an organic orange for this! As an alternative for the real vanilla bean you can take 1 tsp vanilla flavoring.

To make sure the flavor of the cranberries is evenly distributed among all the cookies, chop them up.

It tastes best when they are only about 1/4 of the original size.

Don't let the cranberry cookies out of your sight. They get dark very quickly. In my oven, I have to turn the baking sheet after 5 minutes because it bakes very lopsided.

So better always keep an eye on it.

If the cranberry cookies are baked too long, they will become very dry and hard. They are ready when they still feel very soft in the middle.

When cooling on the hot tray, they still pull a little and are then perfect.
